Spicy Black Bean Burgers

Spicy Black Bean Burger

I have been a fan of Meatless Monday for a while, and I try to practice it in my home as much as possible.  The challenge is finding things that my carnivorous king of a husband will like as well.  It has to be filling, flavorful, and not to weird.  That is why I LOVE these Spicy Black Bean Burgers. They are just what it takes to keep Studhubs happy, and I know you are going to love the too!  I can't wait to share them with you, so...

Let's Get Started!

Spicy Black Bean Burgers:
*Prep Time:  10 min.  *Cook Time: 8-10 min.  *Difficulty:  Easy  *Servings: 6-8 Patties

Ingredients:



  • 1 15 oz. Can of Black Beans, drained
  • 1 c. Frozen Corn
  • 1- 1 1/2 c. Seasoned Bread Crumbs
  • 1/2 Onion, grated
  • 4-6 Cloves of Garlic, grated
  • 2 Eggs, slightly beaten
  • 1 tsp. Seasoned Salt
  • 1/2 tsp. Salt
  • 1/2 tsp. Chili Powder
  • 1/2 tsp. Cumin
  • 1/2 tsp. Black Pepper
  • 1/4 c.  Fresh Cilantro, chopped


To begin you will need to drain a can of black beans and place into a large mixing bowl.


Next, using the back of a fork, potato masher, or chopper like mine, mash the black beans.
You don't want to completely mash them.  You are going to want a 70/30 texture.  70% mashed with 30% texture.


Now grate the garlic and add to the bowl.
If you don't have a nifty hand grater like I have here, you can do it on your box grater.


Next you will grate the onion.
I REALLY recommend grating your onion instead of dicing it.  It will give your patties a great texture & flavor without biting into bits of raw onion.


Now add the bread crumbs.
Start with a cup.  Once you have mixed it together you may need to add more to get the right consistency for making a patty.


Add the corn.
No, you do not have to thaw it, trust me.


Pour in the eggs.


Now you can add the chili powder,


Cumin,


Seasoned salt,


Salt,
(I know that seems like a lot of salt, but remember, beans are a lot like potatoes.  They need the seasoning.  However, you can always omit this step if you are concerned.)


And pepper.


Oh!  And don't forget the cilantro.
This adds a great freshness to the burgers.


Mix it all together.
Make a patty.  If it falls apart too easily, just add another half cup of bread crumbs.


Once you have made your patties place a skillet over medium/low heat and add 2-3 tbsp. oil.


Once the skillet it hot you can add the burgers.
Brown for 4 min. on the first side.


Then flip and brown for 4 more minutes on the other side!  It's that simple!


Place on a beautiful bun, add your favorite toppings and there you have it!
It's gorgeous!  To be honest, if you didn't mention it, I would almost dare say you wouldn't even realize this was meatless!


And look at the beautiful filling!

  • 1/2 tsp. Chili Powder
  • 1/2 tsp. Cumin
  • 1/2 tsp. Black Pepper
  • 1/4 c.  Fresh Cilantro, chopped
Directions:
  1. To begin you will need to drain a can of black beans and place into a large mixing bowl. 
  2. Mash the black beans.You don't want to completely mash them.  You are going to want a 70/30 texture.  70% mashed with 30% texture.
  3. To the mashed beans add the corn, 1 c. bread crumbs, garlic, onion, eggs, chili powder, cumin, seasoned salt, salt, pepper, and cilantro.  
  4. Mix together and form patty.  If you feel the mixture is not holding together well enough, add a little more bread crumb.
  5. Form the mixture into patties.
  6. Place a skillet over medium/low heat and add 2-3 tbsp. of oil. 
  7. When the skillet is hot add the burgers and brown for 4 minutes.
  8. After 4 minutes, flip and cook for 4 more minutes. 
  9. Serve on a bun or in lettuce wrap, top with your favorite topping, and ENJOY!
