Grilled Antipasto Pizza

For as far back as I can remember we had this tradition in my family. 
 Every Friday night, after school, my parents would take us to Blockbuster Video where we would take turns picking out a movie for the family.  Then, we would return home and order Napoli's Pizza for dinner.  EVERY FRIDAY NIGHT! I have to be honest about something, I don't remember the movies, but I remember looking forward to the event every week.  Why?  Because it was something my entire family did together. 
Today we are returning to these events known as family night.  Everyone is powering down and reconnecting over a movie or a board game, and always with food.  But wait!  What if you could make family night even MORE memorable!?!  Yes, you can!  For instance, what if, instead of ordering pizza, you MADE your pizza?  Everyone in the kitchen talking, laughing, cooking, connecting?  Talk about making memories.  Want your picky eater to try something new?  Put it on a pizza HE made and it is go time!
When it comes to pizza the varieties are only limited to your imagination, and today's pizza recipe was birthed out of just that!  One night, a few years ago, my best friend and I set out to create a delicious pizza that was a little healthier for us.  What was born is seriously one of the best pieces of pie I have ever put in my mouth! Grilled Antipasto Pizza!  Perfect for families, parties, and date night!  You are going to love it, and I can't wait to share it with you!!!
Let's Get Started!

Grilled Antipasto Salad:
*Prep Time:  10 min.  *Cook Time: 10-15 min.  *Difficulty:  Easy  *Servings: 8 slices (round)
Ingredients:
  • Tomato Sauce (Find my recipe HERE)
  • Pizza Dough (Find my recipe HERE)
  • 8 oz. Shredded Parmesan Cheese
  • 1 link of Grilled Smoke Sausage
  • 1 Green Pepper, sliced
  • 1 Red Onion, sliced
  • 1 c. Mushrooms, sliced
  • 1 c. Black Olives, sliced
  • Pepper Rings
  • Sun-Dried Tomatoes packed in olive oil
Tools:
  • Rolling Pin
  • Baking Sheet
  • Grill
  • Chef's knife
  • Pizza Cutter

To begin, take a moment and prep all of your ingredients.
Afterwards, I would put everything on a try so that is can be easily carried out to the grill.


Next, you will want to roll out the pizza dough.
For easy rolling, make sure your dough is a room temperature.
Another tip I would like to share is to use corn meal instead of flour.
This will keep the dough from sticking to your board AND make the dough MUCH more manageable when it comes to transporting it.   


From your board, pull the dough onto the BACK of a baking sheet.


Then, gently glide the dough from the baking sheet to a medium high grill.
Close the lid and let the dough cook for approx. 5 min. 


You will know it is time to flip the dough when you see the edges stiffen and the dough starts to bubble.

Wait, you don't have a grill you say?  No worries, just add the toppings and put the dough on to a baking sheet and into a 450 degree oven and cook for 15 minutes.


Then, using a large spatula and some tongs, my tools of choice, flip the dough!
Look at those BEAUTIFUL grill marks!


Now it is time to get to work!
Using your sauce of choice, spread a thin coat across the crust.
I don't like to use A LOT of sauce.  I want to enhance the flavor of the pizza, not kill it with too much sauce.


Now, add the green peppers and red onion. 
These were beautiful, fresh ones I got from our local farmer's market. 
They were literally in the ground two day before!  Now THAT is farm to table!


Now it is time for the meat portion of this pizza. 
If you wanted to keep things elegant, you could use a prosciutto, but my protein of choice is a nice grilled smoked sausage. (You can also pan fry it.)


After that, you can add the mushrooms, black olives, sun-dried tomatoes, and pepper rings.


Time for the cheese!
I love using parmesan here instead of mozzarella.  It gives the pizza a rich, salty flavor without being greasy.

Close the lid and allow the dough to cook for another 5 min. or until the cheese melts.


And there you have it!
A DELICIOUS Grilled Antipasto Pizza!  You will never look at "pie" the same way again! 


Look at all of those healthy and fresh ingredients.  My mouth is watering just thinking about it!

Directions:
  1. Prepare the toppings.
  2. Roll out the dough.
  3. Place dough on the back of a baking sheet.
  4. Glide the dough from the back of a baking sheet to a medium/high grill.
  5. Close the lid and cook for 5 minutes.  You will know it is time to flip with the dough starts to bubble.
  6. Using tongs and a large spatula, gently flip the dough.
  7. Spread a thin layer of sauce onto the pizza.
  8. Add the toppings finishing with the Parmesan cheese.
  9. Close the lid and cook for another five minutes or until the cheese melts.*
  10. Serve and enjoy!
* If you do not have a grill you can bake this pizza in a 450 degree oven for 15 minutes.

  1. Pizza is a great product. We at our company cannot do without it. Our lunch ritual is to order pizza and eat it for all of our team (of course, except for those who are very strict about their figure [just kidding]). We work a lot remotely, and unfortunately, this does not happen often. Our company Argentics operates on the development and design of computer games and quarantine is not a hindrance.

  2. I'm not really into cooking with someone, I prefer to do everything myself because cooking is a pretty calming process, and I don't like getting distracted. I like to turn on the music that I download with Tubidy, there are many YouTube playlists that I enjoy, and for a few hours, I can just focus on cooking and forget about all my daily problems. After that, I can watch a movie with my family, but not while cooking.
