It's the last week of the month, and like many of you, my grocery budget is empty. I have a fairly well stocked pantry and freezer, but sometimes I just lack ideas.
Well, yesterday I was introduced to the Hobo Pack from some awesome ladies in the Facebook Group Uncommon Wealth.
What is a Hobo Pack you ask?
Well, in essence, it is a protein, vegetables, and some sort of seasoning, that you place in a foil packet, and cook either in your oven, on the grill, or over an open flame.
Then, because they know I write this blog, I was issued a challenge of sorts to come up with a creative, but tasty Hobo Pack.
Well, I love a good challenge, and I have to say the results were DELICIOUS! I can't wait to share with you what I came up with.
German Style Hobo Packs:
*Prep Time: 15 min. *Cook Time: 15 min. *Difficulty: Easy *Servings: 4 packets
Ingredients:
- 2 links of Kielbasa
- 1/2 a head of red cabbage.
- 1/2 a head of green cabbage.
- 2 potatoes, washed, cubes, and par-boiled
- 1 c. of beer
- 5 tbsp. of extra virgin olive oil
- 3 tbsp. of white vinegar
- 2 tbsp. of honey
- 2 tbsp. of Dijon mustard
- 2 tsp. onion powder
- 2 tsp. chopped parsley
- 2 tsp. chopped thyme
- Salt and pepper to taste
Tools:
- Pot to boil potatoes
- Chef's knife
- Cutting board
- Measuring cups
- Measuring spoons
- Mixing bowl
- Whisk
- Aluminum Foil
- Oven, grill, open flame
As I mentioned before, my grocery budget was at $0, so when figuring out the flavor pallet for the hobo packs, I had to use what I had on hand. Looking in my fridge I saw kielbasa and left over cabbage. I know that I have potatoes. Hmmm, Kielbasa, cabbage, potatoes...GERMAN! I am going German with these Hobo Pack. And if you are going German, you have to have beer and mustard, so I decided to try making a beer and mustard vinaigrette.
The first thing I did was wash, cube, and par-boil my potatoes for about 10 minutes.
Then, I combined the olive oil, vinegar, honey, mustard, beer, onion powder, parsley, thyme, salt and pepper, and mixed it together until well blended. Taste for seasoning and set to the side.
(On a side note, this was totally yummy and I am using it on salad for lunch today!)
Next I got everything prepped and sorted.
I placed a large piece of foil on the counter.
For one packet, add half a link of sliced kielbasa, half of a potato, a little red cabbage,
and a little green cabbage. Season with salt and pepper.
Now take a 1/4 c. of the vinaigrette and drizzle over the contents of the foil.
Then fold into packets.
I cooked mine on a medium high grill for 15 minutes.
If you are using an oven, I recommend 375 degrees for 15 minutes.
After 15 minutes, remove from the grill and VIOLA!
I have to tell you that when you open the Hobo Pack, and that luscious steam
hits you in the face, it will take all of the will power you can muster not to just dive right in!
I emptied my pouch onto a plate and topped with a little more fresh parsley.
This was so delicious, that it is Studhubs approved!
I can't wait to try many varieties of these Hobo Packs this summer, and as I was
making these, I thought to myself "What a great way to get your kids in the kitchen with you!"
So when you find yourself at the end of the month, with a limited budget, and some leftovers in the fridge, I say give these great hobo packs a try! You will NOT regret it!

Directions:
- Wash, dice, and par-boil the potatoes for 10 minutes.
- In a mixing bowl, combine beer, olive oil, vinegar, honey, mustard, onion powder, parsley, thyme, salt and pepper.
- Whisk together until well blended, and then set aside.
- Slice sausage and cabbage.
- Sort packs: 1/2 a kielbasa link, 1/2 potato, even amounts red cabbage and green cabbage, salt and pepper, 1/4 c. vinaigrette.
- Place on a large piece of foil.
- Add contents to the foil.
- Wrap up into little packets.
- Place on a grill or open flame and cook for 15 minutes.
- If using an oven, bake a 375 degrees for 15 minutes.
- Serve and ENJOY!
