Sauteed Carrots with Thyme



I love carrots!  Aside from being my favorite color, orange, they are some of the most delicious and versatile vegetables on the planet!  You can eat them raw, roast them, boil them, the possibilities are endless.  One of my favorite ways to eat them is sauteed in a pan with a little butter and thyme.  They are tender, sweet, rich, and absolutely wonderful!  I am sure these carrots will become a family favorite!

Let me show you how I make them!

Sauteed Carrots with Thyme:
*Prep Time:  5 min.  *Cook Time:  10 min.  *Difficulty:  Easy  *Servings:  4

Ingredients:




  • 2 lb. of carrots
  • 1/3 c. water 
  • 2 tbsp. butter
  • 1 tsp. thyme
  • Salt and pepper
Tools:
  • Chef's Knife
  • Measuring cups
  • Measuring Spoons
  • Skillet
Do you see these beautiful carrots I picked up from the Farmers Market!  DO YOU SEE THAT BEAUTIFUL HAIR!  How could I not buy these!?!



To get started you are going to need to prep the carrots.
Trim the hair off of the top and the little roots from the bottom.  I know that many of you will want to peel these carrots, but so much of the nutrients are in the skin of the carrot, so I don't.



Since I am choosing to leave my skin on, I will give them a good scrub in the sink.
Also, as you have noticed, I am leaving these carrots whole.  They were baby carrots so you can do that.  If I was using the full-sized carrots you get in the super market I would slice them on the bias.



Heat the deep skillet over a medium high heat.



Add the carrots.



Next, add the water and cover.



Let the carrots steam and cook for 10 minutes or until fork tender.



Add the butter and...



Season with thyme, salt, and pepper.


There you have it!  A BEAUTIFUL summer side dish that will have your family and guests raving!  So tonight, grad some carrots, head home to your kitchen, and go wild!  It's that kinda of night!

Ingredients:
  • 2 lb. of carrots
  • 1/3 c. water 
  • 2 tbsp. butter
  • 1 tsp. thyme

Directions:
  1. Clean your carrots, i.e. peel, wash, trim, etc.
  2. Heat skillet over a medium/high heat until HOT.
  3. Add the carrots to the pan.
  4. Add the water.  
  5. Cover and cook for 10 minutes or until for tender.
  6. Add the butter, thyme, salt, and pepper. 
  7. Toss until coated and a little caramelized. 
  8. Serve and Enjoy!
