We all have nights that we don't want to cook. There is no sense in trying to deny it. Even I have those nights. However, regardless if I feel like cooking or not my family has to eat. Now, I realize it would be simple to go through a drive-thru or order in, but that is really not the kinda of meal I want to set before my family. This is why I like to take one day a month and prep certain ingredients to have on hand. That way when nights like this arrive I can still put a decent meal on the table. That is what I love about this recipe. It uses ingredients that are pre-cooked that you can throw together and bake off in the oven! Chicken Fajitadillas! This is a great quick and easy weeknight meal that you and your family will love!
Let me show you how I do it!
Chicken Fajitadillas:
*Prep Time: 20 min. *Cook Time: 10-15 min. *Difficulty: Easy *Servings: 6 fajitadillas
Ingredients:
- 2 tbsp. Taco Seasoning
- 2 Boneless Skinless Chicken Breast
- 1 Onion, sliced
- 1 Green Pepper, sliced
- 3 Cloves of Garlic, minced
- Pepper Jack Cheese, grated
- 12 Flour Tortillas
Tools:
- Skillet
- Baking sheet
- Chef's Knife
- Grater
- Measuring Spoons
As I said before, part of this dish is prepping things ahead of time. I like to take an afternoon on a day I don't have a lot going on and make some things I can keep in the freezer for a later date.
We will begin by prepping the chicken.
Heat a skillet over medium/high heat. I prefer using a cast iron skillet here, but any skillet will do.
While the skillet is heating, I like to make my own taco seasoning. My recipe is as follows.
- 1 tbsp. Chili Powder
- 1/4 tsp. Garlic Powder
- 1/4 tsp. Onion Powder
- 1/4 tsp. Crushed Red Pepper Flake
- 1/4 tsp. Dried Oregano
- 1/2 tsp. Paprika
- 1 1/2 tsp. Cumin
- Salt and Pepper
Season the chicken on both sides with the taco seasoning.
Now, to the HOT skillet, add the chicken and let it cook for 6-8 minutes.
After 6-8 minutes flip the chicken and cook for another 4-6 minutes.
Remove the chicken from the skillet and place on a plate.
To the skillet add a tbsp. of butter.
Now add the sliced onions.
Add the green pepper and cook until the pepper are soft and the onions are translucent.
Add the garlic and cook until you can smell the garlic coming from the pan.
While the onions and peppers are cooking, take this time to slice the chicken.
Now it is time to assemble!
First, place one tortilla per fajitadilla on a baking sheet.
Then add a layer of cheese on the tortilla.
Next place a layer of onions and peppers.
Now add the chicken slices.
Add another layer of cheese.
Now, place another tortilla on top.
Now, it is at this point that you can wrap these in foil and pop them in the freezer for a later date.
BUT, if you are really, really hungry, you can place that baking sheet into a 350 degree oven and bake for 7-8 minutes.
Take them out, flip, and place them back in the oven for another 5-6 minutes.
Take them out of the oven. See how the tortillas are nice and crisp and the cheese is melted and gooey.
Oh yes, these re going to be good!
Take your fajitadilla, cut it is portions,
Serve it up with your favorite toppings and ENJOY!

- Preheat a skillet over medium/high heat.
- Prep Taco Seasoning.
- Season both sides of the chicken breasts with the taco seasoning.
- Place in the skillet and cook for 6-8 minutes.
- Flip and cook another 4-6.
- Remove chicken from the skillet and sit on a plate.
- To the skillet add 1 tbsp. of butter.
- Add the onions and peppers and cook until soft and the onions are translucent.
- Add garlic and cook until you smell it coming from the pan.
- While the peppers and onions are cooking, slice the chicken breasts.
- To assemble the fajitadillas place one flour tortilla per fajitadilla on the counter.
- Add a layer of cheese.
- Add a layer of onions and peppers.
- Add a layer of chicken.
- Add another later of cheese.
- Top it off with another tortilla.
- At this point you can wrap the fajitadillas in foil and place in the freezer.
To Cook:
- Preheat a 350 degree oven.
- Place fajitadillas on a baking sheet.
- Bake for 7-8 minutes.
- Remove from oven, flip the fajitadillas, and place back in the oven for another 5-6.
- Serve and enjoy!
