Tofu Tikka Masala (Better Than Trader Joe’s!)

Hey Y'all!  Welcome to my West Virginia Kitchen!  Let me tell you something, Kitchen Fam...

I fell in LOVE with Trader Joe’s frozen Vegan Tikka Masala. Like... stock-up-the-freezer kind of love.

There’s just one problem...

The closest Trader Joe’s is about two hours away from me 😩

And while I love a good grocery trip, I do not love it that much.

So you already know what had to happen.

We recreated it at home, and not only did we recreate it... we made it creamier, saucier, and honestly? Better.






This version has rich coconut milk, a splash of lime for brightness, and just a hint of maple syrup to balance everything out. It’s cozy, comforting, and weeknight-friendly.

And because we are a “feed everybody at the table” kind of house, I’m giving you both the tofu version and the chicken version.

Ingredients

For the Sauce

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons garam masala
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon salt, or to taste
  • 1 (15-ounce) can tomato sauce
  • 1 (13.5-ounce) can full-fat coconut milk
  • 1 tablespoon maple syrup
  • 1 to 2 tablespoons lime juice, to taste

For the Protein (Choose One)

Tofu Version

  • 1 block extra-firm tofu, pressed and cubed

Chicken Version

  • 1 pound boneless, skinless chicken breast or thighs, cut into bite-sized pieces








Instructions

Step 1: Prep Your Protein

For Tofu:
Press the tofu for 15 to 20 minutes, then cut it into cubes. For the best texture, air fry or pan-fry the tofu until lightly golden before adding it to the sauce.

For Chicken:
Season the chicken lightly with salt and pepper. Cook it in a skillet over medium heat until browned and cooked through. Set aside.

Step 2: Build the Flavor

Heat the olive oil in a large skillet over medium heat. Add the diced onion and cook until softened, about 5 minutes. Stir in the garlic and ginger and cook for 1 more minute.

Step 3: Add the Spices

Add the garam masala, cumin, paprika, turmeric, and salt. Stir constantly for about 30 seconds to toast the spices and wake up all that flavor.

Step 4: Make It Saucy

Pour in the tomato sauce and coconut milk, stirring until smooth and combined. Add the maple syrup and lime juice. Let the sauce simmer for 10 to 15 minutes, or until thickened and rich.

Step 5: Bring It All Together

Add your cooked tofu or chicken to the sauce. Simmer for another 5 to 10 minutes so the protein can soak up all that flavor.










Serving Suggestions

Serve this tikka masala over cumin rice, plain white rice, or with warm naan on the side.

Optional toppings:

  • Fresh cilantro
  • An extra squeeze of lime
