Tequila Lime Chicken

I love chicken.

I would go so far as to call it the tofu of meats!  I say that because, on it's own, it doesn't have a lot of flavor, but when you season it just right, OMG! One of my favorite ways to prepare chicken is with my tequila lime marinade.  It is PACKED full of flavor, super simple, and I know you are going to love it!  I can't wait to share it with you so

Let's Get Started!

Tequila Lime Chicken:
*Prep Time:  30 min.  *Cook Time:  12-16 min.  *Difficulty:  Easy  *Servings: 2-6

  •  2-6 Boneless Skinless Chicken Breast
  • 1/4 c. Tequila
  • 1/4 c. Extra Virgin Olive Oil
  • 2 Limes, zested and juiced
  • 1 Orange, juiced
  • 1 tbsp.  Chili Powder
  • 1 tsp. Salt
  • 1/2 tsp. Pepper

To begin, place the chicken into a resealable bag and pour the tequila,

olive oil,

lime zest,

Please excuse the bruise on my wrist.  My dog accidentally scratched me and, well, you see the result.  *lol*

lime juice,

orange juice,

chili powder,

and salt.

Work the marinade all around the chicken, making sure everything is well coated.
Press the air out of the bag, seal it, and place it in the refrigerator for at least 30 min.

While this is happening you can preheat the grill.

After the chicken has marinated for 30 min, place on a medium/high grill facing at 10 o'clock, and cook for 4 min.

Now turn the chicken to 2 o'clock and cook for 4 more min.

After the chicken has cook for 8 minutes on the first side flip.
See the beautiful criss-cross pattern you made?!?
Now cook for another 6 min. until there is no more pink and the juices run clear.

And there you have it!

Beautiful, delicious, festive Tequila Lime Chicken!  I love to serve this up with some fresh pic de gallo and cilantro lime rice.  One thing is for sure you and EVERYONE you serve this to is going to love it!  So get in the kitchen tonight and create a fiesta!

And as always...
