  • 1 Tbsp Garlic, minced

  • 1 cup Vegetable Broth
  • 2 Tbsp Milk Jerk Seasoning (adjust for spice levels)
  • 2 Tbsp Nutritional Yeast (optional)
  • 1 tsp Smoked Paprika
  • 1 tsp Garlic Powder
  • 1 tsp onion Powder
  • Salt and Pepper, to taste
  • 1 cup Shredded Parmesan Cheese (or vegan Parmesan)

For the Caramelized King Oyster Mushrooms:

  • 8 oz King Oyster Mushrooms, shredded
  • 1 Tbsp Olive Oil
  • 1 Tbsp Butter
  • 2 Tbsp Soy Sauce
  • 2 Tbsp Brown Sugar
  • 1 tsp Garlic powder
  • 1 tsp Onion Powder
  • 1 tsp Smoked Paprika

Additional Toppings:

  • Sliced Green Onions
  • Cilantro
  • Lime Wedges 







Step-by-Step Instructions:

  1. Cook the Pasta:  Bring a large pot of salted water to a boil.  Cook the pasta according to the package instructions until al dente.  Drain and set aside.  
  2. Caramelize the Mushrooms:  Heat the oil and butter in a skillet over medium-high heat.  Add the shredded king oyster mushrooms and cook until golden brown.  about 5-10 minutes.
  3. Make the Marinade: Whisk together the soy sauce, brown sugar, garlic powder, onion powder, and smoked paprika.  Pour mixture over the mushrooms and stir so that everything is coated.  Cook until the mushrooms are carmelized and glossy.  Set aside.  
  4. Sauté the Veggies:  In the same skillet heat olive oil over medium heat.  Add the sliced bell peppers and onion and cook until softened, about 5-7 minutes.  
  5. Make the Creamy Jerk Sauce:  Lower the heat and add the coconut milk, vegetable broth, Parmesan Cheese, jerk seasoning,  nutritional yeast, garlic powder, onion powder, smoked paprika, salt and pepper.  Stir to combine and let it simmer for 3-5 minutes until the sauce thickens slightly.  
  6. Toss in the Pasta:  Toss in the cooked pasta and mix until fully coated in the sauce.  
  7. Assemble the Dish:  Place the creamy Rasta Pasta and top with the caramelized king oyster mushrooms.  Garnish with fresh parsley and serve with lime wedge on the side for a optional tangy kick.
