Ingredients:
For the Soy Curls:
- 2 cups Soy Curls
- 1 cup broth (vegetable or no-chicken) for soaking
- 1 Tbsp Olive Oil
- 1 tsp Garlic Powder
- 1 tsp Onion Powder
- 1/2 tsp Smoked Paprika
- Salt and Pepper, to taste
For the Noodles:
- 8 oz Wide Egg Noodles (or vegan noodle alternative)
- 4 cups Vegetable or No-Chicken Broth
- 1 tsp Garlic Powder
- 1 tsp Onion Powder
- 1 tsp Italian Seasoning
- Salt and Pepper, to taste
- 2 Tbsp Cornstarch
- 1/4 cup water
Instructions:
Step 1: Prepare the Soy Curls
- Place the soy curls in a large bowl and pour the broth over them. Let them soak for 10 minutes until rehydrated.
- Drain and gently squeeze out any excess liquid.
- Heat olive oil in a skillet over medium heat. Add the rehydrated soy curls and season with the garlic powder, onion powder, smoked paprika, salt and pepper. Cook for 5-7 minutes until lightly browned. Set aside.
Step 2: Cook the Noodles
- Cook the noodles according to the package instructions. Drain and set aside.
Step 3: Make the Sauce
- Pour in the broth and add the garlic powder, onion powder, and Italian seasoning. Add salt and pepper to taste.
- Bring to a simmer. Combine the cornstarch and water. Add to the simmering broth and let simmer until the gravy thickens.
- Once the gravy is to your desired thickness add the soy curls and noodles back to the pot.
- Mix everything together until the soy curl and noodles are coated by the gravy.
Step 4: Serve and Enjoy
- Taste and adjust seasonings as needed.
- Serve hot, garnish with fresh parsley if desired.
