INGREDIENTS: 
  • 2 lb Flat Iron Steak, cut into bite-sized pieces. 
  • 1 medium Onion, diced
  • 1 Tbsp Garlic, minced
  • 8 oz Mushrooms, sliced
  • 8 oz Block of Cream Cheese, room temperature
  • 1/2 cup Sour Cream
  • 2 cups Beef Broth
  • 2 Tbsp Worcestershire Sauce
  • 2 tsp Dijon Mustard
  • 1 tsp Paprika
  • Salt and Pepper, to taste
  • Egg Noodles (for serving)
  • Fresh Parsley, for garnish





INSTRUCTIONS:
  1. Prepare the Flat Iron Steak:  Begin by cutting the steak into bite-size pieces.  Season generously with salt and pepper. 
  2. Brown the Beef:  (Optional, but recommended) Heat a tablespoon of oil in a large skillet over medium-high heat.  Sear the steak pieces for 2-3 minutes on each side until browned.  This step adds depth of flavor but can be skipped if you're in a hurry. 
  3. Layer in Crockpot:  Add the browned beef, onions, garlic, mushrooms, beef broth, Worcestershire sauce, Dijon mustard, and paprika into the crockpot.  Stir to combine all the ingredients.  
  4. Slow Cook:  Set your crockpot to LOW and cook for 6-8 hours, or on HIGH for 3-4 hours, until the beef is tender.  
  5. Thicken the Sauce:   30 minutes before you are about to eat, add the cream cheese to the slow cooker.  After 30 minutes, add the sour cream and stir everything together until a smooth and silky sauce is created.
