INCREDIENTS: 

For the Kebabs:
  • 1 Red Bell Pepper, cut into chunks
  • 1 Yellow Bell Pepper, cut into chunks
  • 1 Zucchini, sliced into thick chunks
  • 1 Red Onion, cut into wedges
  • 1 cup Cherry Tomatoes 
  • 1 cup Mushrooms. 
For the Marinade:
  • 1/4 cup Olive Oil 
  • 2 Tbsp Balsamic Vinegar
  • 2 Cloves Garlic, minced
  • 1 tsp Dried Oregano
  • 1 tsp Dried Basil
  • 1/2 tsp Smoked Paprika
  • Salt and Pepper, to taste






INSTRUCTIONS:
  1. Prepare the Vegetables:  Wash and cut all the vegetables into uniform pieces to ensure even cooking. 
  2. Make the Marinade:  In a large bowl, whisk together olive oil, balsamic vinegar, minced garlic, oregano basil, smoked paprika, salt, and pepper.
  3. Marinate the Vegetables:  Add the vegetables to the bowl and toss to coat them evenly with the marinade.  Cover and refrigerate for at least 30 minutes, or up to 2 hours for deeper flavor. 
  4. Preheat the Grill:  Preheat your grill to medium-high heat.  If using wooden skewers, soak them in water for 15-20 minutes to prevent burning. 
  5. Assemble the Kebabs:  Place the kebabs on the grill and cook for 10-15 minutes, turning occasionally, until the vegetables are tender and slightly charred.
