Crispy Mexican Pizza Recipe

WHAT YOU WILL NEED:

  • 20 Fajita Size Flour Tortillas
  • 1 lb. Ground Meat or Shredded Chicken
  • 1 (16 oz) can of Refried Beans
  • 1 Onion, diced (I actually like using dried minced onions in this best)
  • 1 Tbsp Garlic, Minced
  • 1 packet of Taco Seasoning
  • Taco Sauce
  • Cheddar Cheese, shredded
  • Green Onions, Diced Tomatoes, Sour Cream, any toppings you want

THE ART OF MAKING THE PERFECT CRISPY MEXICAN PIZZA:

I don't care what anyone says, there IS an art to making the perfect Crispy Mexican Pizza. Here are a few of my "professional" tips and trick to achieve pizza greatness! LOL



  1. The Crispy Foundation: Begin your culinary journey by mastering the art of the crispy crust. I like using a flour tortilla for this because it gives you the perfect balance of chew and crisp. I mean when you bite into a pizza you don't want it to be a cracker. It doesn't really matter what brand you use, but I personally think the fajita size flour tortilla is the perfect amount. Don't let it fool you. There is more there than you think.

  2. Vibrant Toppings: Next comes the fun part - toppings! From zesty salsa and gooey cheese to spicy jalapeños and hearty beans, the possibilities are endless. The one suggestion I will make is to make sure you are using fresh ingredients. When you are dealing with rich, heavy flavors in the base, those fresh toppings give it the little something, something that makes it special.

  3. Bold Flavors: No crispy Mexican pizza is complete without a burst of bold flavors. Salt and pepper alone will not do in this recipe. Now, I used a store-bought taco seasoning, but you can totally create your own spice blend. The thing here is DO NOT SKIMP ON THE SPICES!

  4. Customization Galore: One of the beauty of making Crispy Mexican pizza at home is the ability to customize it to suit your preferences. Whether you're a meat lover, vegetarian, or vegan, you can create ideas for crafting a pizza that caters to your dietary needs and flavor preferences.

This literally draws people in to eat and socialize with one another and THAT is what supper time is all about!

HOW TO MAKE CRISPY MEXICAN PIZZAS:

  1.  Preheat the oven to 400 degrees F (200 degrees C)
  2. Place a pan over a medium/high heat and add a little oil.  When the pan is hot add the onion.  Sauté the onion until it is soft and translucent.  Add the ground meat to the pan and cook until brown and no longer pink.  Add the minced garlic and taco seasoning.  Finish cooking according to the instructions on the packet. 
  3. Remove the taco filling from the pan, wipe clean, and add more oil.  Fry the flour tortillas on each side for about a minute until golden.  Remove from pan and place on a paper towel to remove an excess grease.  You will need two tortillas per pizza. 
  4. On the first tortilla, spread a layer of the refried beans.  You may want to heat this up to make it a little easier.  Next add the taco meat topping.  Finally sprinkle a little bit of cheese.  Place the second tortilla on top of the bean, meat, and cheese filling and press down.  Top that tortilla with the taco sauce.   Don't skimp on the sauce.  Now add a little more cheese on top of the pizza.  
  5. Place the pizzas on a lined baking sheet and place in the oven for 10 minutes.  
  6. Remove from the oven, add any toppings you like, and ENJOY!
