Grilled Chicken Cordon Bleu Recipe: A Healthier Twist on a Classic Dish

INGREDIENTS:




  • 4 Boneless, Skinless Chicken Breasts
  • 4 Slices of Black Forest Ham, Deli Style
  • 4 Slices of Swiss Cheese
  • 2 tbsp. Dijon Mustard
  • 2 tbsp. Honey
  • 2-3 tbsp. Extra Virgin Olive Oil
  • 1 tsp. Garlic Powder
  • 1 tsp. Onion Powder
  • 1 tsp Paprika
  • Salt & Pepper, to taste




INSTRUCTIONS:


1.  Preheat the Grill:  Start by preheating your grill to medium-high heat (around 375°F to 400°F).  This ensures the chicken cooks evenly and gets those beautiful grill marks.



2.  Prepare the Chicken:  Place the chicken breasts on a cutting board.  Using a sharp knife, carefully slice each breast horizontally to create a pocket.  Be careful not to cut all the way through.  








3.  Stuff the Chicken:  Season the inside of the chicken with a pinch of salt, pepper, garlic powder, onion powder, and paprika.  Place 1 slice of ham and 1 slice of Swiss cheese inside each pocket. 












4.  Secure the Chicken:  Use toothpicks to secure the edges of the chicken breasts, preventing the cheese and ham from spilling out during grilling.




5.  Grill the Chicken:  Place the stuffed chicken breasts on the preheated grill.  Grill for about 6-8 minutes per side, or until the chicken in cooked through and has an internal temperature of 165°F,  The cheese should be melted and the chicken should have nice grill marks.









6. Season the Outside:  In a small bowl combine the mustard, honey, olive oil, and spices.  Whisk together until smooth.  Then brush the glaze on the outside of your cooked chicken, giving it a couple minutes to thicken on each side.  










7.  Rest and Serve:  Remove the chicken from the grill and let it rest for a few minutes.  This allows the juices to redistribute, making the chicken more tender and flavorful.  Remove the toothpicks before serving.





8,  Garnish and Enjoy:  Garnish with freshly chopped parsley if desired, and serve immediately.  Pair with a side of grilled vegetables or a fresh salad for a complete meal.
