Easy Vegan Just Egg Vegetable Quiche Recipe

 Breakfast is probably one of my favorite meals and while I love oatmeal, yogurt, fruit, granola, and smoothies, sometimes you just want a good hearty breakfast.  That's why I am so thankful for things on the market like Just Egg.  Because of it I can make  AMAZING vegan breakfast recipes like this Easy Vegan Just Egg Vegetable Quiche Recipe for my family (and for you).

For this Easy Vegan Just Egg Vegetable Quiche Recipe you will need a few simple ingredients:

  • 1 Frozen Pie Crust (make sure it is vegan if that is important to you)
  • 1 bottle of Just Egg
  • 2 cups Fresh Baby Spinach
  • 4 oz Mushrooms, sliced
  • 1 Onion, diced
  • 1 Green Bell Pepper, diced
  • 5 oz Grape Tomatoes, halved
  • 1 cup Shredded Vegan Cheese
  • 2 Tbsp Vegan Butter
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1/2 tsp Salt
  • 1/2 tsp Seasoning Salt
  • 1/2 tsp Ground Black Pepper
To begin, you will need to preheat the oven to 350 degrees. 

WHAT IS JUST EGG AND IS IT NUTRITIOUS?:

While the oven is preheating let me take a moment to tell you about Just Egg and why I love it so much.  No, this isn't sponsored.  I just like sharing amazing plant-based products with you guys that I love.  According to their website Just Egg is an allergy free, cholesterol free, dairy free, 100% plant based egg replacement that is high in protein and low in saturated fat.  It's made from water, mung bean protein isolate, canola oil, various gums and spices.  

We used to eat eggs on the daily before going vegan and I would be lying if I said I didn't miss them.  That's why I love this product so much.  The flavor and texture are pretty much right on and it makes for a stick to your ribs kind of breakfast that we sometimes miss as veg heads.

Go ahead and sauté your onions and green bell pepper.

This will take 2-3 minutes. You want to make sure the vegetables are nice and tender and the onions are translucent.

Next add the vegan butter to the pan and let it melt.

DO I HAVE TO ADD THE BUTTER?:

You don't have to add the butter to this recipe.  HOWEVER, we are about to sauté some mushrooms and I find that this little bit of added fat in the recipe makes all the difference to the overall flavor and texture of the mushrooms, and is well worth it.  Another thing to keep in mind is that this Easy Vegan Just Egg Quiche Recipe makes 2 quiches.  That little bit of oil is relatively small per serving.

WHAT'S YOUR FAVORITE VEGAN BUTTER?

When it comes to favorites, I think it's all relative, but our personal favorite vegan butter is the Country Crock Plant-Based Butter and I'll tell you why. One, it tastes great.  Two, in terms of vegan butters its pretty inexpensive. Three, you can find it in almost all grocery stores. Even though live in a "BIG CITY", that means nothing in West Virginia.  It's a pretty rural area.  Accessibility is important to us.

Now it's time to add the mushrooms to the pan.  

Take your time with these.  You want the mushrooms to release as much liquid as possible.  This will take them from a slimy consistency to a meaty consistency.  I think it makes all the difference.

Also, if you have some liquid smoke or soy sauce add a couple dashes.  It adds this smokey, umami flavor reminds me of bacon.

When the mushrooms are browned and beautiful add the tomatoes. 

Cook for 2-3 minutes.

Add the fresh baby spinach to the pan and allow to wilt.

This only takes 1-2 minutes.

Your vegetables will look a little something like this when they are ready. 

Also, you don't want to cook the spinach to oblivion.  Let it cook just long enough to wilt down.  This still has to bake in the oven and you want to maintain the color and integrity of the spinach.

CAN YOU USE FROZEN SPINACH FOR THIS RECIPE?:

So fresh spinach is best for this recipe, but you can use frozen.  If you choose to use frozen spinach you will need to thaw it out, place into a clean kitchen towel, and squeeze as much of the excess liquid out as you can.

Remove all of the vegetable filling from the pan and place into a mixing bowl.

Add the vegan cheese to the bowl.

Again, if you are oil free you can skip this step, but honestly I can't think of one reason why you would really want to. lol

WHAT IS YOUR FAVORITE VEGAN CHEESE?:

I literally get asked this question all the time.  Let me prefeace this by saying there are A LOT of great vegan cheese options on the market.  We all have different pallets so my favorite may not be your favorite.  That being said we personally love the Violife and Follow Your Heart Brands.  I find that they have great flavor, melt really well, and the price point is reasonable.

Add your spices to the mixing bowl and stir everything together.

This recipe can make either two shallow quiches or one large deep dish one. 

Separate the Easy Vegan Just Egg Vegetable Quiche filling equally between two crusts.

LET'S TALK PIE CRUSTS:

Of course you can use a homemade pie crust for this recipe. In fact I have my grandmother's recipe that I will link HERE as well as a great gluten-free option I will link HERE

But to be honest, I like to keep things simple and grab a couple frozen ones from the frozen section at my grocery store.  You just have to make sure that they are vegan if that's important to you.  If not, follow your heart and use what you want.

Place the Easy Vegan Just Egg Vegetable Quiches on a baking sheet and place in the preheated oven. 

Bake for 45 minutes to 1 hour until the Just Egg has set and is no longer jiggly.

CAN YOU FREEZE THIS?:

The answer to this question to this answer is 100% YES!  The actually freeze really well. 

To freeze just allow to completely cool, wrap in aluminum foil, and freeze.  

To reheat, remove from the freezer.  Allow to thaw. Bake in a 350 degree oven until heated through.
