Easy Sweet and Sour Meatballs with Pineapple Recipe

Everyone loves a good quick and easy weeknight meal.  I am no different.  There are nights where I just want to come home from work, throw something in the pan, and call it done.  That's why I love this recipes for Easy Sweet and Sour Meatballs.

Minimal ingredients that you probably already have on hand are about to transform the simple frozen meatball into a meal you can be proud to serve any time.  I can't wait to share it with you so...

Let's Get Started!  
For these Easy Sweet and Sour Meatballs you are going to need a few simple ingredients:

  • 1 16 oz bag of Frozen Meatballs 
  • 1 15 oz bottle of Sweet and Sour Sauce
  • 1 20 oz can of Pineapple Chunks, drained
  • 2 Bell Peppers, largely diced
  • 1 Onion, diced
  • 4 Cloves of Garlic, minced
  • Salt and Pepper, to taste
  • Sesame seeds and sliced green onion, optional

To begin you will need to get yourself a nice deep pan.  I like using this braiser from Aldi, but any deep pan will do.  

Then you are going to place the pan over medium/high heat and allow it to get hot.  Once the pan is hot add the peppers and onion.  Allow to cook 2-3 minutes until tender and translucent. 


Now you can add the garlic.  Cook for another 1-2 minutes until you can smell if coming from the pan.  


Now you can add the pineapple.  Let this cook a few minutes to heat through and get a little brown around the edges. 


Now remove from the pan.  


Time to add the meatballs to the pan.   This is one of those steps that keep this meal simple.  Just get your favorite brand of frozen meatballs.  This are the Earth Grown vegan ones from Aldi, but any kind you like will do. 

I cooked these meatballs according to the instructions on the package.  


Once the meatballs are fully cooked you can add the pepper and onion mixture back to the pan.  


The second shortcut to this recipe is using your favorite Sweet and Sour Sauce.  Sure you can make your own, and it's not THAT hard to do, but sometimes you're lazy and that's okay too. 

Add the bottle of sweet and sour sauce to pan and simmer for about 5 minutes. 


Top with some sesame seeds and sliced green onion and you are ready to eat.


Look  at how beautiful this pan is and it was literally ready in UNDER 30 minutes!  


I paired these Easy Sweet and Sour Meatballs with a side of rice and MMMMMM were they delicious.  So the next time you are exhausted & don't feel like cooking don't be afraid to take a couple short cuts and get in the kitchen to make an AMAZING meal TONIGHT!

Easy Vegan Sweet and Sour Meatballs with Pineapple Recipe

These Easy Vegan Sweet and Sour Meatballs with Pineapple use simple ingredients you may already have on hand & are the perfect weeknight meal!

Ingredients

  • 1  16 oz bag of Frozen Vegan Meatballs (or regular meatballs if you are not plant-based)
  • 1  15 oz bottle of Sweet and Sour Sauce
  • 1  20 oz can of Pineapple Chunks, drained
  • 2  Bell Peppers, largely diced
  • 1  Onion, diced
  • 4  Cloves of Garlic, minced
  • Salt and Pepper, to taste
  • Sesame seeds and sliced green onion, optional

Instructions

  1. To begin place a deep pan over medium/high heat and allow the pan to get hot. 
  2. Add the peppers and onions to the pan and sauté until soft and translucent.
  3. Next, add the garlic to the pan and cook until you can smell it coming from the pan. 
  4. Add the pineapple to the pan and cook until they are heated through and starting to brown.  
  5. Now remove the pineapple and vegetables from the pan.  
  6. Add the frozen vegan meatballs to the pan.  Cook according to the stovetop instructions on the package. 
  7. Once the meatballs are fully cooked you will return the pineapple, peppers, onion, and garlic to the pan.  
  8. Add the bottle of sweet and sour sauce.  Simmer for 5-10 minutes. 
  9. Top with sesame seeds and sliced green onions. 
  10. Serve and Enjoy!
