Cajun Sweet Potato Bowl Vegan Recipe

Since going plant-based the ONE THING my husband and I REFUSE to compromise on is flavor.  Nope, no weird foo foo ingredients here.  We are all about healthy, whole foods that taste delicious and this Cajun Sweet Potato Bowl Recipe is the perfect example of what I am talking about.

For this Cajun Sweet Potato Bowl Recipe you will need a few simple ingredients:

The ingredients needed for the Cajun Sweet Potato Bowl.

  • 2 Medium Sweet Potatoes, diced
  • 2 Stalks of Celery, sliced
  • 1 Onion, diced
  • 1 Bell Pepper, diced
  • 4-6 Cloves of Garlic, minced
  • 1 15 ounce Can of Red Kidney Beans
  • 1 cup Rice, Cooked
  • 1 tsp Cajun Seasoning
  • 1 tsp Kosher Salt
  • 1/2 tsp Ground Black Pepper
  • Extra Virgin Olive Oil
To begin you will need to preheat your oven to 450 degrees. 


The potatoes dice and place in a bowl with the minced garlic.

Whilst the oven is preheating you can dice your potatoes, bell peppers, onion, and celery, mince your onion, and place in a large mixing bowl.

Drizzle a little extra virgin olive oil over everything.

Sprinkle the seasonings over the vegetables and toss with your hands so that everything is coated.

The sweet potatoes, onions, celery, and garlic roasting on a baking sheet in the oven.

Place on a baking sheet and pop in the preheated oven for 30 minutes.

As your vegetables are heating you will heat up the can of beans in a pot with a little salt and pepper.  If you really like spice add a little more of the cajun seasoning as well.

Stirring the roasting veggies halfway through the cooking process.

At the fifteen minute mark give your veggies a little stir around and place back in the oven for another 15 minutes.

To plate this Cajun Sweet Potato Bowl you will lay a little bed of rice in your bowl and place the seasoned red beans and roasted vegetables over it and dinner is done!  Top it off with a little green onion for some freshness and color and I know you and you're entire family are gonna love it.  It couldn't be easier so get in the kitchen and give it a try TONIGHT!

Cajun Sweet Potato Bowl Vegan Recipe

Ingredients:

  • 1 cup Rice, Cooked
  • 1 tsp Cajun Seasoning

  • 1/2 tsp Ground Black Pepper
  • Extra Virgin Olive Oil

Instructions:

How to cook Cajun Sweet Potato Bowl Vegan Recipe

  1. Preheat the oven to 450 degrees.
  2. Dice all of the vegetables and place in a mixing bowl.  Add the garlic as well. 
  3. Drizzle olive oil over the vegetables and add the seasonings.  Toss with hands in bowl until all the vegetables are coated. 
  4. Place vegetables on baking sheet and place in 450 degree oven for 30 minutes, stirring half way through. 
  5. Drain and rinse red bed.  Place in a pot with 2 cups of water, salt, and pepper.  
  6. Simmer until heated through.*
  7. When vegetables are finish roasting remove from oven.  
  8. Lay a bed of cooked rice in a bowl.  Top with a scoop of red beans and some of the roasted vegetables. 
  9. Serve and Enjoy!

Notes:

* If you like your food spicy add a little more of the cajun seasoning to the beans.
