Low Carb Spaghetti Squash Carbonara Recipe

Like many of you, Studhubs and I are trying to work on our summer bodies (lol) and watch those pesky carbs.  Sometimes I think eating low carb can be a little redundant, and because I love food, I want to keep things interesting. So in times like this I love experimenting with some of my favorite recipes and just swiping out the carbs for veggies.  Take this Low Carb Spaghetti Squash Carbonara Recipe for example.  


All the rich and creamy flavors of a traditional spaghetti carbonara, but just a fraction of the carbs.  I know you're gonna love this one so...

Let's Get Started!

For this Low Carb Spaghetti Squash Carbonara you will need a few simple ingredients:


  • 1 Spaghetti Squash
  • 4 slices of Bacon, cooked and chopped
  • 1 c Grated Parmesan
  • 1 tsp Garlic Powder
  • 1 Egg Yolk
  • Salt and Pepper, to taste



To begin, you will need to cut your spaghetti squash in half and scoop out the seeds.


Next, season the inside with a little salt and pepper.

My preferred method for cooking my spaghetti squash is in my Instant Pot.
However, if you do not have a instant pot I will include oven directions in the printable recipe.


Place the spaghetti squash in the Instant Pot with 1 cup of water.



Place the lid on the Instant Pot and make sure the valve is set to SEALING.


Press the MANUAL button and set the timer to 15 minutes. 

**With this squash I probably could have cooked it for only 10 minutes.**


While the spaghetti squash is cooking in the Instant Pot, you will want to prepare the bacon.

Place the bacon on a baking sheet and put it in a 425 degree, preheated oven.


Set the timer for 10 minutes.


Once the spaghetti squash has finished cooking, do a quick release by turning the valve to VENTING.  When the pressure has released you can remove the spaghetti squash from the Instant Pot.

Use a fork to remove the spaghetti squash strands from the shell.


Place the spaghetti squash in a bowl.


Add the garlic powder to the spaghetti squash.


Add the egg yolk to the spaghetti squash.


Add the grated parmesan cheese.


Stir together to make a creamy, cheesy sauce.


Add the bacon and stir into the squash.

ingredients:

  • 1 Spaghetti Squash

  • Salt and Pepper, to taste

How to cook Easy Low Carb Spaghetti Squash Carbonara Recipe

To Prepare the Spaghetti Squash in the Instant Pot:
  1. Cut the spaghetti squash in half and scoop out the seeds.
  2. Season the inside with salt and pepper.
  3. Place in the Instant Pot with 1 cup of water.
  4. Place the lid on the Instant Pot and make sure the valve is set to SEALING.
  5. Press the MANUAL button and set the time for 15 minutes.
  6. After 15 minutes turn the valve to VENTING.
  7. When the pressure has released, remove the spaghetti squash from the Instant Pot and use a fork to pull the strands away from the shell.
To Prepare the Spaghetti Squash in the Oven:
  1. Preheat the oven to 425 degrees.
  2. Cut the spaghetti squash in half and scoop out the seeds.
  3. Season the inside with salt and pepper and drizzle with a little olive oil.
  4. Bake for 30 minutes.
  5. Use a fork to pull the strands away from the shell.
For the Carbonara:
  1. Add the spaghetti squash strands to a mixing bowl. 
  2. Add the garlic powder, egg yolk, Parmesan cheese, and bacon to the bowl. 
  3. Stir together until everything comes together to make a cheesy, creamy, sauce.  
  4. Serve and Enjoy!

    1. Correct. The heat from the squash will take care of that, also think of when you fry an egg and dip the toast in the yolk. The yolk is not cooked through all the way and it is fine.
