Quick and Easy Corn Casserole Recipe

I feel like every country cook worth their weight in butter needs to have a good Corn Casserole Recipe in their back pocket.  Now this one is by no means my creation, nor is it groundbreaking, but it IS delicious, versatile, and the recipe I grew up on.

This Quick and Easy Corn Casserole uses pantry ingredients you may already have on hand and can be on your table in no time.  I know you're gonna love it so...

For this Quick and Easy Corn Casserole Recipe you will need a few simple ingredients:

The ingredients needed to make the corn casserole.

  • 1 pkg Jiffy Corn Muffin Mix
  • 1 can Whole Kernel Sweet Corn, drained
  • 1 can Cream of Corn
  • 1 c Sour Cream
  • 2 c Shredded Cheddar Cheese
  • 1/2 c Butter, melted
  • 1 Egg, lightly beaten
  • Salt and Pepper, to taste
To begin you will need to preheat your oven to 350 degrees.

Next, in a large mixing bowl, you can combine to Jiffy mix, creamed corn,

Add the shredded cheese to the mixing bowl.

Top with a few sliced green onions and there you have it, a gorgeous, light, fluffy, and creamy corn casserole that everyone is going to love!

The thing I love most about this Quick and Easy Corn Casserole Recipe is not only the fact that it is delicious, but also how versatile it is.  I have added jalapeños for a spicer version, bacon, mixed veggies, the options are endless.  It's the perfect addition to all of the picnics and potlucks the summer season brings our way and a nice switch from you basic mashed potato side.  No matter how you try it, you're gonna love it so get in the kitchen and give it a try tonight!
