I don't know about you, but the one thing I struggle with most when it comes to meal planning is sides. Growing up we always had some form of meat and two sides at every meal. That's a lot of pressure. lol One of my favorites were these rosemary, pan roasted, red potatoes my dad made. True story, I LOVED when there were one or two left in the pan after supper to nibble on while I cleaned the kitchen as well as any crispy bits! I was thinking of that recipe the other day while meal planning and thought I would try my own take on it and that is where these Roasted Garlic Parmesan Potatoes were born.
Tender on the inside, crisp on the out, and PACKED full of flavor I could eat these little gems ALL DAY LONG! I know you're gonna love them so...
Let's Get Started!
For this Roasted Garlic Parmesan Potato Recipe you will need a few simple ingredients, most of which you probably already have in your pantry.
- 1 pound bag of red potatoes
- 1/4 c Extra Virgin Olive Oil
- 2 Tbsp Grated Parmesan Cheese
- 1 Tbsp Minced Garlic
- 1 tsp Italian Seasoning
- 1 tsp Kosher Salt
- 1/2 tsp Ground Black Pepper
- Chopped chives for garnish
To begin you'll need to preheat your oven to 425 degrees.
So here's a little Kitchen Wife Wisdom for you:
While the oven is preheating, go ahead and place a foil lined baking sheet in there as well.
This will allow the pan to get nice and hot, making sure the outside of your potatoes get all crispy and delicious.
Trust me, it matters.
After that you'll need to cut the potatoes into bite-sized pieces.
These were petite potatoes so I only needed to cut them in half, but if you're working with a larger potato, don't be afraid to cut it into smaller pieces.
Place the potatoes into a mixing bowl and add the parmesan, garlic, Italian seasoning, salt, and pepper.
Next, drizzle the olive oil over everything.
Give it a toss so that ALL the potatoes are coated in the yummy goodness.
Once the oven is preheated remove the pan and give it a little spritz of cooking spray. Then, pour the potatoes onto it. You should immediately here a lovely sizzle. It's basically the sound dreams are made of.
Return the pan the oven and cook for 20 minutes, stirring halfway through.
And just like that you have one of the most stunning and delicious potato sides you have ever seen! The inside is so tender and creamy, while that hot baking sheet has created this gorgeous golden crust. Then there's the yummy parmesan and garlic! OH.EM.GEE!!! This may be my new favorite thing, honest. I finished these Roasted Garlic Parmesan Potatoes off with a little more cheese and some chopped chives. PERFECTION! I wish I could tell you that I exercised self control in eating them, but all the sudden I was a child again where calories and carbs did not exist and we crushed the entire pan. You're welcome. LOL Needless to say I know you are going to love these Roasted Garlic Parmesan Potatoes so get in the kitchen and give then a try tonight!

Roasted Garlic Parmesan Potato Recipe:
*Prep Time: 10 min *Cook Time: 20 min *Servings: 4

Ingredients:
- 1 pound bag of red potatoes

Directions:
- Preheat the oven to 425 degrees.
- Line a baking sheet with foil and place into the preheating oven to allow it to get nice and hot as well.
- Cut the potatoes into bite-sized pieces and place into a mixing bowl.
- To the potatoes add the parmesan, garlic, Italian seasoning, salt, pepper, and olive oil.
- Toss everything together so that all the potatoes are coated.
- Remove the HOT baking sheet from the preheated oven, spray with a little cooking spray, and place the potatoes onto it.
- Return to the oven and cook for 10 minutes.
- Remove the pan from the oven, toss everything around and return to the oven for 10 more minutes.
- Top with a little more parmesan cheese and chopped chives.
- Serve and Enjoy!
