Chicken Asparagus and Snap Pea Skillet Recipe

This weekend was AMAZING!  Why you ask?  We FINALLY had a break in the weather, the sun was shining, and all is well with the world again!  I'm sorry if I'm overly exuberant, but it has been a LONG winter around here.  So today I can't think of a better way to ring in the season than with this delicious Chicken Asparagus and Snap Peas Skillet Recipe!


Its fast, delicious, cheap, and what!?!  HEALTHY!?!  WHOA!!  Y'all are going to love this recipe and I can't wait to share it with you so...

Let's Get Started!



For this Chicken Asparagus and Snap Pea Skillet Recipe you are going to need a few simple ingredients,


  • 1 lb of Boneless, Skinless Chicken, cut into cubes
  • 1/2 a bunch of Asparagus, stemmed and cut in half
  • 1 Red Onion, thinly sliced
  • 1 container of Sugar Snap Peas
  • 1 c Chicken Broth
  • 2 Tbsp Cornstarch
  • 2-3 Tbsp Olive Oil
  • 2 Tbsp Butter
  • 1 tsp Italian Seasoning
  • 1 Tbsp Garlic, minced
  • 1 Tbsp Lemon Juice
  • Chives
  • Salt and Pepper to taste


To begin you will need to place a deep skillet over medium/high heat and allow to get hot.


Add the butter to the pan and allow it to melt.


Add the cornstarch to the chicken and toss until it is fully coated.


Add the chicken to the skillet and cook until crown and no longer pink.
Once fully cooked, remove from the pan.


Add the asparagus...


red onions...


snap peas...


and season with salt...


and pepper.

Sauté for about 5 minutes.


After 5 minutes add the garlic, Italian seasoning,


Chicken broth,


And lemon juice.

Cover and let the vegetables simmer for another 3 minutes.


Return the chicken to the pan.


Toss everything together.


Top with chopped chives.


Serve and Enjoy!
