Rotisserie-Style Chicken Skillet Dinner Recipe

INGREDEINTS:

For this One Pot Rotisserie-Style Chicken Skillet Dinner you will need to gather a few simple ingredients:
  • 4-6 Boneless, Skinless Chicken Breasts
  • 1 Bag of Frozen Broccoli Florets
  • 1 c Quick Cooking Farro
  • 1 Onion, diced
  • 1 Tbsp Garlic, minced
  • 1/4 tsp Garlic Powder
  • 1/4 tsp Onion Powder
  • 1/4 tsp Italian Seasoning, dried
  • 1/4 tsp Salt
  • 1/4 tsp Paprika
  • 1/4 tsp Chili Powder
  • 1/4 tsp Black Pepper
  • 2-3 Tbsp Extra Virgin olive Oil
  • 2-3 Tbsp Butter
  • Shredded Parmesan Cheese





INSTRUCTIONS:

  1. Prepare the Farro:  Prepare the quick cooking farro according to the directions on the package and season with 1 tsp of salt. 
  2. Season the Chicken:  In a small bowl combine the garlic powder, onion powder, Italian seasoning, salt, paprika, chili powder, and pepper.  Season the chicken liberally on both sides.  
  3. Cook the Chicken:  Place a skillet over medium-high heat.  add the butter and olive oil.  Allow the pan to get hot.  Place the seasoned chicken breasts into the pan and cook for 4-6 minutes on each side until the juices run clear and the meat is no longer pink.  Remove from the pan and set to the side.
  4. Cook the Aromatics and Broccoli:  Add the onions and garlic to the skillet.  Cook until tender and aromatic.  Add the broccoli and cook until thawed and your desired texture, around 10 minutes.  
  5. Combine with the Farro:  Add the cooked farro to the pan.  Season with salt and pepper.  Stir everything together and place the chicken on top.  
  6. Add the Cheese and Serve:  Sprinkle the Parmesan cheese on top and place under the broiler to melt.  Serve hot and Enjoy!
