I'm always looking for ways to make dinner easier without sacrificing quality. I feel like that's the goal of each and every one of us really. So the other day when I was about to make dinner I had a thought. "If I'm going to roast these vegetables, why couldn't I just put EVERYTHING on the sheet pan?" I gave it a try, and let me tell you, sheet pan meals are my life right now! You will be seeing more of these in the future, but let's start with my Easy Pork Chop Sheet Pan Recipe.
So simple, and the best part...You can do all the prep work the night before! I can't wait to share it with you so...

Easy Pork Chop Sheet Pan Meal:
*Prep Time: 10 min *Cook Time: 30 min *Difficulty: Easy *Servings: 4
Ingredients:
- 4 Boneless Center Cut Pork Chops
- 1 lb. Broccoli, cut into florets
- 2 large Sweet Potatoes, peeled and diced
- Extra Virgin Olive Oil
- 1 tsp. Kosher Salt
- 1 tsp. Lemon Pepper Seasoning
- 1/2 tsp. Dried Thyme
To begin you will need to heat the oven to 425 degrees.
Next pat the pork chops dry with some paper towels.
This will make sure that the pork chops roast and not steam. This way you will get that gorgeous brown color.
Now season both sides of the pork chops with the salt and lemon pepper seasoning and place them at one end of the baking sheet.
Once you have prepped the broccoli and sweet potatoes place them into a large mixing bowl.
Pour a little extra virgin olive oil over them.
Then season with salt,
Lemon pepper seasoning,
And dried thyme.
Toss everything together so that all of the vegetables are coated with the oil and seasonings.
Place the broccoli and sweet potatoes on the other half of the baking sheet.
Now place the baking sheet into the preheat 425 degree oven and cook for 30 minutes.
About half way through I actually flipped the pork chops for growing to occur on both sides.
After 30 minutes remove from the oven, and dinner is ready!
I wish you could smell how delicious this is. That pork chop was beautifully cooked. Browned on the outside, but moist and juicy on the inside. And the vegetables...I'm not lying when I say that roasted broccoli is my FAVORITE way to eat broccoli these days. Not that it needs it, but if you wanted to add something to this meal, it pair nicely with some brown rice. - Place the baking sheet in the oven and bake for 30 minutes, flipping the pork chops half way through.
