Its Avocado Toast with Egg and Sriracha.
Now some of you may be saying WHAT? How does this even qualify for a recipe? Well, the answer is simple. I posted a picture of it on social media and received more inquiries on how I make it than any of my recipes to date so I thought I would write this up and share you my new favorite go to breakfast. I know you are going to get hooked as well, so...
Let's Get Started!
*Prep Time: 2 min *Cook Time 5 min *Difficulty: Easy Servings: 1
Ingredients:
- 1 Slice of Bread
- 1/2 a ripe Avocado, mashed
- 1 Egg, fried
- 1 tsp. Extra Virgin Olive Oil
- Sriracha, to taste
- Salt and Pepper, to taste
To begin you will need to place a small frying pan over medium/high heat and add the oil.
Allow the pan and the oil to get hot.
Once the pan and the oil are hot, kind of turn the pan around so that it is coated with the oil and add the egg.
Season the egg with a little salt and pepper, and let cook for 4-5 minutes.
While the egg is cooking, cut the avocado in half and squeeze the half WITHOUT the pit into a small bowl. Season with salt and pepper and mash with a fork.
***Here is a tip. Don't worry about wasting the other half of the avocado. Simply leave the pit in and cover tightly with cling wrap. It will be good to go, on your counter, until tomorrow. ***
Place your bread into the toaster and toast until it is golden brown.
You can use any bread you like, but I really like this organic honey oat bread from Aldi.
Once the toast has finished, smear the mashed avocado all over it.
Next, place the egg over it.
Drizzle a little sriracha sauce over it and you are ready to eat!

The best part, it's ready in UNDER 10 minutes! - Cut the avocado in half and squeeze the half WITHOUT the pit in a small bowl. Add some salt and pepper and mash with a fork. *
- Place the bread of your choice into the toaster and cook until golden brown.
- Once toast has finished smear the mashed avocado all over one side.
- Place the fried egg on top and drizzle with a little sriracha.
- Serve and Enjoy!
*Save the other half of your avocado by leaving the pit in it, and wrapping tightly with cling wrap. It will stay good on your counter until the next day.
Such a simple and yet delicious meal for breakfast, lunch or dinner. I think I would especially enjoy this as a light dinner.

Deleteafter a pastry kitchen arrange for thicker cuts of bread brought about cuts too thick for the toaster and the cook proposed buttering and flame broiling them as a cure in 1941.

DeleteAnother win! That sriracha really wins the day with this one. Tip: I didn't skimp on the sriracha and used Trader Joe's Everything But The Bagel seasoning. Whoa! :)
