Mexican Fried Rice Recipe

If you have followed my blog for any amount of time, you know that I'm a hard core advocate of the pantry.  When your pantry is well stock, dinner on busy weeknights goes from "No I can't." to #YesYouCAN!  Take my easy Mexican Fried Rice Recipe.  Using a few simple ingredients from my pantry I not only have dinner for tonight, but some amazing take-two recipes as well!

Let's Get Started!
Mexican Fried Rice:
*Prep Time: 3 min. *Cook Time:  20 min.  *Difficulty:  easy  *Servings: 8-10 

Ingredients:

The ingredients needed for the Mexican Fried Rice.

  • 2 lb. Ground Beef
  • 1 c. Uncooked Rice
  • 3 c. Water
  • 1 15 oz. can of Black Beans, drained and rinsed
  • 1 10 oz. can of Mexican Style Corn
  • 1 10 oz. can of Ro*Tel Diced Tomatoes with Lime Juice and Cilantro
  • 1 tsp. Chili Powder
  • 1 tsp. Cumin
  • 1 tsp. Onion Powder
  • 1 tsp. Garlic Powder
  • 1 tsp. Oregano
  • Salt and Pepper to taste
  • Cilantro, Lime, and Monterrey Jack Cheese for garnish
Some of the canned items that are always in my pantry are beans, corn, and Ro*Tel Diced Tomatoes.



You can find them in the ethnic foods aisle of your local Walmart.  This little can packs a massive flavor punch, and I can't even being to tell you how many recipes I've use them in to bring a little something extra to my dish.  In fact, they are the essential ingredient in my Mexican Fried Rice.

To begin, you will need to add 2 cups of water to a small sauce pan over high heat.
Bring to a boil.

A deep skillet on the stove.

While you are waiting for the water to come to a boil for the rice, place a deep skillet over high heat on the stove.

Ground beef in the skillet, on the stove.

Add the ground beef to the skillet.

Season the ground beef with salt and...

Pepper.
Break it up with a rubber spatula and let it cook until it is brown and no longer pink in the middle.

By now the rice will be at a rolling boil.
Add the rice to the pot.

The sauce pot over medium/high heat with the lid on it.

Lower the heat to medium, cover, and let simmer for 15 minutes.

Now back to the beef.
Once the ground beef is fully cooked, add the chili powder,

Onion powder being added to the cooked ground beef in the skillet.

Oregano being added to the cooked ground beef in the skillet.

Oregano,

Garlic powder being added to the cooked ground beef in the skillet.

And garlic powder to the pan.

Water being poured into the cooked ground beef and spices to make sauce.

Add the final cup of water to the skillet.
This will help to create a nice sauce for the dish  that will flavor the rice.

Now you can add the corn,

The cooked rice being added to the skillet.

And finally the cooked rice to the skillet.

Give everything a nice stir, cover and let cook over medium/high heat for another 5 minutes.

When you are finished you will see that the rice has absorbed the sauce and it will look a little something like this.

For a fun presentation I like to serve the Mexican Fried Rice in these cute tortilla bowls and top it with some shredded Mexican cheese blend, sour cream, chopped scallions, cilantro, peppers, and lime wedges.  Come on now!  You KNOW you just want to dig into that bowl.

And as I said earlier, this Mexican Fried Rice recipe can be used as a filling for Southwest Stuffed Peppers, Tex-Mex Burritos, etc.  You can even add it to some beef stock, add a little extra taco seasoning, and make some taco soup! Directions:
  1. To begin, you will need to add 2 cups of water to a small sauce pan over high heat.

  2. While you are waiting for the water to come to a boil for the rice, place a deep skillet over high heat on the stove. 
  3. Add the ground beef to the skillet and season with salt and pepper.  Cook until brown and no longer pink. 
  4. Once the water has come to a rolling bowl, add the rice, lower the heat, cover and cook for 15 minutes.  
  5. When the meat is fully cooked add the chili powder, cumin, oregano, onion powder, garlic powder, water, corn, Ro*Tel Tomatoes, and black beans. Stir together.
  6. After 15 minutes, add the rice.  Stir, cover the skillet, and cook for 5 more minutes.
  7. Taste for seasoning and make any adjustments you feel it needs.  
  8. Garnish with some sour cream, lime wedges, fresh cilantro, and chopped scallions.
  9. Serve and Enjoy!
