Grilled Summer Squash Recipe

One of the best ways to save money in the kitchen is to prepare foods that are in season.  One produce that there is definitely an abundance of right now is Summer Squash.  It is inexpensive and there are infinite ways to make it. Grilled Summer Squash is one of my favorite summer side dishes because you can serve it with just about anything, and you are not slaving away over a hot stove in the summer humidity.  You will not believe how simple this is so...

Let's Get Started!

Grilled Summer Squash:
*Prep Time: 5 min.  *Cook Time: 8-10 min.  *Difficulty:  Easy  *Servings: 4-6

Ingredients:


  • 4-6 Summer Squash
  • 1 Red Onion, sliced
  • 4-6 Cloves of Garlic, sliced
  • 1 tsp. Thyme
  • 2-3 tbsp. Extra Virgin Olive Oil
  • Salt and pepper, to taste


To begin rinse and dry your summer squash.
Then slice it into 1/4 inch disks.
Place into a large mixing bowl.


Slice the red onion and add to the bowl as well.


Slice the garlic and add to the mixing bowl.


Add the thyme to the mixing bowl.


Season with salt and ....


Pepper.


Drizzle the olive oil over the vegetables and give everything a toss so that it is coated with seasoning and oil.


I got this great grill pan at the Dollar Tree.
I place it on the grill and place a sheet of foil over it because as you can see, it is well loved.


Once everything is hot, I pour the squash onto the pan and cook for 8-10 minutes, stirring occasionally.

And there you have it!
