Sauteed Kale

 
These days kale is the green of choice!  It is the number one searched vegetable on the Food Network's website, and it seems like no matter where you look, everyone is using it.  Personally I love it!  Where spinach can get slimy, and leave an aftertaste in your mouth, kale remains al dente and keeps lightly bitter taste greens are known for.  Another reason I love kale so much is that it is SUPER easy to prepare.  Growing up we did the all day braise of collards with ham hocks.  All my country people out there know what I am talking about!  Oh yeah, they were delicious, but kale is much more versatile and I am going to share my favorite weeknight way to cook it up for you! 
 
Sautéed Kale:
*Prep Time: 5 minutes  *Cook Time: 15 minutes  *Difficulty:  Easy  *Servings:  4-6
 
 
Ingredients:
 
  • Olive Oil
  • 1 tbsp. red wine vinegar
  • 2 cloves of garlic, minced
  • 1/2 onion, finely diced
  • 2 bunches of kale, chopped
  • 1/2c. water
  • Salt and Pepper

Tools:
  • Chef's knife
  • Measuring spoon
  • Measuring cups
  • Sauté pan

Directions:

 
First things first, you will need to preheat your skillet over medium high heat and add oil.

 
Next, add your onions and cook until soft and translucent.
When onions have cooked, add the garlic and cook until you smell it. 

 
Add your kale (you will need to remove the stems and chop it.).

 
Add the water...

 
Then cover and allow the kale to wilt and cook for 10 minutes.
 
 
After 10 minutes have elapsed, add salt and pepper to taste and...

 
the red wine vinegar. 

 
Toss every thing and let cook for a couple minutes longer.

 
Plate up with your favorite main dish and enjoy!
 
This kale has the perfect balance of savory, bitter, and tangy.  It is perfect with a rich meat like pork.  The acid help to cut through the fat and enhance the flavor!  Also, kale is very good for you!

Ingredients:
  • 2 tbsp. Olive Oil
  • 2 cloves of Garlic, minced
  • 1/2 of an onion, finely diced
  • 2 Bunches of Kale, chopped
  • 1/2 c. water
  • 1-2 tbsps.. red wine vinegar
Tools:
  • skillet
  • tongs
  • chef's knife
Directions:
  1. Pre-heat skillet over medium high heat and add olive oil.
  2. Add onion and let cook until soft and translucent.
  3. Add garlic and let cook until you smell it. 
  4. Add chopped kale.
  5. Add water and cover.
  6. Let cook down for 10 minutes.
  7. Uncover, add the red wine vinegar, and taste for seasoning.
  8. Add salt and pepper and allow to cook for a few minutes more. 
  9. Place and serve.
*For a little added spice you can add red chili flake.
