Vegetable Fried Rice Recipe

It's Meatless Monday everyone, and today I have a real treat for you!  One of my favorite things to get when we order take out is Vegetable Fried Rice.  It is bright, colorful, and super filling.

 However, you don't have to order take out to get this delicious main course!  You can easily may Vegetable Fried Rice at home in UNDER 20 minutes, and the best part is that you can customize it with any of the vegetables you enjoy!  I can't wait to share this one with you, so...

Let's Get Started!

Vegetable Fried Rice Recipe:
*Prep Time: 10 minutes *Cook Time:  20 minutes  *Difficulty:  Easy  *Servings: 4-6

Ingredients:

  • 1 cup Rice, cooked
  • 1 lb Fresh Broccoli Florets
  • 1 Bell Pepper, color of your choice
  • 8-10 Cherry Tomatoes
  • 2 Carrots, sliced
  • 4-5 Mushrooms, quartered
  • 1 Onion, diced
  • 2 Eggs, lightly beaten
  • 1/2 c. Low Sodium Teriyaki Sauce
  • 1 Tbsp Coconut Oil
  • Salt and Pepper to taste
Any time you are making fast cooking, Asian dishes, you should have all of your vegetables prepped, and your rice ready to go.  This will ensure you will have success with your recipe EVERY time!

Place a wok or a deep skillet over HIGH heat and add the coconut oil.
Allow the pan to get SMOKING hot.

 Now add the vegetables to the pan and toss them around for 2-3 minutes to get some caramelization on them.

Now drop the heat to MEDIUM/HIGH, cover, and let the vegetables steam for 10 minutes, stirring occasionally.

Once you have done that, bump the heat back up to HIGH, push all of the vegetables to the side of the pan creating a well in the middle, and add the egg.
Use your rubber spatula to scramble the eggs into the vegetables.

Once the egg is fully cooked you can add the prepared rice to the pan.
Toss it with the vegetables and let it cook for 2-3 minutes.

Now add the teriyaki sauce and stir everything together.

And it's that simple!

Directions:
  1. Prep all of your vegetables and cook your rice.
  2. Place a wok or heavy bottomed pan over HIGH heat and add the coconut oil.  
  3. Let the pan get SMOKING hot.
  4. Add the vegetables and allow them to cook for 2-3 minutes, tossing occasionally. 
  5. Turn the heat to MEDIUM/HIGH and cover the pan.  
  6. Let the vegetables steam for 10 minutes, stirring occasionally.  
  7. Remove the lid from the pan, bump the heat back up to HIGH, and much all of the vegetables along the side.
  8. In the middle, our in the beaten egg and stir until fully cooked, and scrambled. 
  9. Add the cooked rice to the pan, toss everything together, and let cook 2-3 minutes. 
  10. Add the teriyaki sauce and stir everything together.
  11. Serve and Enjoy!
