Grilling season is officially upon us! Well, if you're like my cousin Doug, grilling season is ALL year round. Not everyone is fortunate enough to have an outdoor grill, but don't let that stop you! I'm going to show you how you can make my Grilled Chili Lime Chicken with an inexpensive indoor grill pan.
This chicken is moist and smoky, with just a hint of tang from the lime. It's the perfect summertime dish and I can't wait to share it with you so...
Let's Get Started!
*Prep Time: 30 min. *Cook Time: 8-10 min. *Difficulty: Easy *Servings: 4-6
Ingredients:
- 4-6 Boneless, Skinless Chicken Breasts
- 2 Tbsp. Coconut Oil
- 1 Lime, juiced
- 1 Tbsp. Red Wine Vinegar
- 2 Tbsp. Cilantro
- 1/2 tsp. Paprika
- 1 tsp. Chili Powder
- 1/2 tsp. Garlic Powder
- 1/2 tsp. Onion Powder
- 1/8 tsp. Cayenne Pepper
- Salt and Pepper, to taste
To begin you will need to place the juice of one lime and the coconut oil into a small mixing bowl.
Then, to the oil and lime juice, add the red wine vinegar, cilantro (I like to use dried when grilling because it doesn't burn like fresh can), paprika, chili powder, garlic powder, onion powder, cayenne pepper, salt, and pepper.
Whisk everything together until smooth.
Next place the chicken breasts into a resealable bag and pour the marinade over the chicken.
Press the air out of the bag, seal it, and make sure all of the chicken is coated.
Place in the refrigerator for 30 minutes to overnight.

When you're ready, place the grill pan over medium/high heat and let the pan get hot.
Once the pan is hot place the chicken on the grill pan and gook for 4-5 minutes.
You will see the white of the cooked chicken come to about half way up the side.
After 4-5 minutes flip the chicken and cook for another 4-5 minutes until the juices run clear and the internal temperature is 165 degrees.
Remove from the pan or grill and let rest for 5 minutes.
I should say that you would use the exact same technique with a conventional grill as you would the pan, and the chicken will be equally delicious!
How gorgeous is this chicken!?! I mean COME ON!! You would never guess that this was cooked on a grill pan indoors. And can we talk about the flavor? Directions:
- In a small mixing bowl combine the lime juice, coconut oil, red wine vinegar, cilantro, paprika, chili powder, garlic powder, onion powder, cayenne pepper, salt, and pepper. Whisk together until smooth.
- Place the chicken into a resealable bag, and pour the marinade over it.
- Make sure all of the chicken is coated with the marinade, press all of the air from the bags, and seal it.
- Place the marinating chicken in the refrigerator for 30 minutes to overnight.
- Heat your grill to medium/high.
- Place the chicken on the grill for 4-5 minutes, until the white "doneness" moves half way up the chicken.
- Flip and cook for another 4-5 minutes.
- When the juices run clear and the internal temperature is 165 degrees remove from the grill and allow to rest for 5 minutes.
- Serve and Enjoy!
