Crunchy Asian Grilled Chicken Ramen Noodle Salad: A flavor packed Delight

 Welcome to my West Virginia Kitchen!  Memorial Day is just around the corner and that means cookout season is upon us.  Everyone always wants you to bring a side and if you're on the hunt for a refreshing, flavorful, and easy-to-make salad, look no further.  My Crunchy Asian Grilled Chicken Ramen Noodle Salad is a perfect blend of textures and tastes that will elevate your salad game to new heights.  

This recipe combines succulent grilled chicken, crisp vegetables, and crunchy ramen noodles, all tossed in a tangy Asian inspired dressing.  Whether you're preparing a quick weeknight dinner or a dish to impress at a gathering, this salad is sure to be a hit.

For the Salad:
  • 2 Boneless, Skinless Chicken Breasts
  • 2 packs of Instant Ramen Noodles (discard the seasoning packets)
  • 1 cup Cabbage, shredded
  • 1 cup Purple Cabbage, shredded
  • 1 cup Carrots, shredded
  • 1 cups Bell Peppers, sliced (I like to used various colors)
  • 2 Green Onions, sliced
  • 1/4 cup Sliced Almonds
  • 1/4 cup Wonton Salad Topping Strips
For the Dressing:
  • 1/4 cup Soy Sauce
  • 2 Tbsp Rice Wine Vinegar
  • 2 Tbsp Sesame Oil
  • 2 Tbsp Honey
  • 1 tsp Ginger, grated
  • 1 tsp Garlic, minced
  • 1 tsp Lime Juice
  • Salt and Pepper, to taste
  • Sesame Seeds


Step 1:  Grill the Chicken
  1. Preheat your grill to medium/high heat. 
  2. Season the chicken breasts with salt and pepper on both sides.
  3. Grill the chicken for 5-7 minutes on each side, or until fully cooked and no longer pink in the center.
  4. Let the chicken rest for a few minutes, then slice into thin strips or dice.

Step 2:  Prepare the Ramen Noodles
  1. Place a small pan over medium/high heat.  
  2. Break the ramen noodles up in the package, then add to the hot pan.  Toast and let the noodles get a warm nutty color. 
  3. Set aside

Step 3:  Make the Dressing
  1. In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, honey, grated ginger, minced garlic, lime juice, salt, and pepper until well combined.

Step 4:  Assemble the Salad
  1. In a large bowl, combine the shredded cabbage, shredded carrots, sliced bell peppers, sliced green onions, sliced almonds, and wonton strip salad topper.
  2. Add the toasted ramen noodles and sliced grilled chicken to the bowl.
  3. Pour the dressing over the salad and toss gently to coat all the ingredients.
  4. Sprinkle Sesame seeds on top for garnish.

Step 5:  Serve and Enjoy!
