As we are heading into spring we are starting to see a lot of rainy days.  Nothing warms the body and soul on a cool, rainy day than and big, hearty bowl of soup.  My Vegan Vegetable and Wild Rice Stew Recipe WILL NOT disappoint!

For this Vegan Vegetable and Wild Rice Stew you will need a few simple ingredients:

The ingredients needed for the Vegan Vegetable and Wild Rice Recipe.

  • 1 cup Wild Rice (or any rice blend), fully cooked
  • 2 Carrots, diced
  • 2 Stalks of Celery, Diced
  • 1 Onion, diced
  • 2 Sweet Potatoes, peeled and diced
  • 3 cloves of Garlic, minced
  • 2 Cups of Kale, massaged and finely chopped
  • 8 oz. Mushrooms, sliced
  • 1 Tbsp Italian Seasoning
  • 4 c Vegetable Broth
  • 2 c Almond Milk
  • 2 Tbsp Cornstarch
  • Salt and Pepper, to taste

The vegetables sautéing in a large pot.

To begin add your carrot, celery, and onion to a pot that is hot and has a little oil in it.
Sauté for 4-5 minutes.

Next add the potatoes,

salt, pepper, and Italian Seasoning,

Ingredients:

  • 1 cup Wild Rice (or any rice blend), fully cooked
  • 2 Carrots, diced
  • 2 Stalks of Celery, Diced
  • 1 Onion, diced
  • 2 Sweet Potatoes, peeled and diced

Instructions:

How to cook Easy Vegan Vegetable and Wild Rice Stew Recipe

  1. To begin, place a large pot over medium/high heat and add a little oil.
  2. Once the pot is hot add the carrot, celery, and onion to the pot and sauté for 4-5 minutes. 
  3. Next add the potatoes, mushrooms, garlic, Italian Seasoning, salt, and pepper to the pot.  
  4. Sauté for 4-5 minutes. 
  5. Pour in the vegetable broth and bring to a boil.
  6. While the broth is coming to a boil, finely chop your kale and massage it until it is tender. 
  7. When the pot has come to a boil add the kale to the pot, stir, and allow to simmer for 10-15 minutes until the potatoes are fork tender. 
  8. Once the potatoes are finished add the fully cooked rice to the pot. 
  9. Combine the almond milk and cornstarch and mix together to make a slurry.
  10. Pour the slurring into the simmering pot and allow it to come to your desired thickness.  
  11. Taste for seasoning. 
  12. Serve and Enjoy!
