Pork Fried Rice Recipe

The other day I purchased a package of pork chops on sale.  I marinated and grilled up the entire package, but after dinner there was one sole chop left over.  ONE!  What can I do with one pork chop? Make an entire new dinner, that's what!  Take my Pork Fried Rice Recipe for example.

Let's Get Started!
For this Pork Fried Rice Recipe you will need a few simple ingredients:

The ingredients needed for the pork fried rice.

  • 1 Pork Chop, fully cooked and diced
  • 1 c Rice, Fully cooked
  • 1 12 oz Package of Frozen Mixed Vegetables
  • 2 Eggs, slightly beaten 
  • 2 Tbsp Low Sodium Soy Sauce
  • Green Onions, Sliced and Sesame Seeds for topping
To begin you will need to place your pan over MEDIUM/HIGH heat and add a little oil. 
Let the pan get HOT!

Once the pan is hot, add the diced pork chop and frozen vegetables.  Cook for 4-6 minutes until the vegetables are heated through and tender.

Scoot the vegetables and pork to the perimeter of the pan and pour the beaten eggs in the center.

Using a rubber spatula stir until the eggs are fully cooked and scrambled.

Add the rice to the pan.

**PRO TIP**

If you know you're going to be making this ahead of time make the rice the day before or in the morning before work.  Chilled rice tends to work best in the dish.

Add the soy sauce, give everything a stir until coated with the soy sauce and everything is mixed and heated through.  Then you are ready to serve!
