Instant Pot Greek Chicken Pasta Recipe

I can't believe we are approaching the end of Crocktober!  I don't know about you, but these have been some of the best crockpot recipes I've ever tried.  For today's Crocktober recipe, I wanted to shake things up and bring you a one-pot meal of Instant Pot Greek Chicken Pasta.


With just a few pantry staples you can create this flavorful dish in 10 minutes which makes it perfect for those busy fall weeknights. I know you're gonna love this one so...

Let's Get Started!

For this  you will need:


  • 2 Boneless Skinless Chicken Breasts, cubed
  • 1 lb Pasta
  • 1 12 oz Bottle of Greek Vinaigrette Dressing
  • 2 c Vegetable Stock (or chicken stock)
  • 1/2 c Kalamata Olives
  • Feta Cheese, crumbled
  • Salt and Pepper, to taste


To begin you will need to cut the chicken into bite-sized pieces.


Next, turn your Instant Pot to SAUTE.


Add a little oil to the insert and allow the Instant Pot to get HOT.


Add the chicken to the Instant Pot and season with salt and pepper.
You are going to let the chicken get brown on the outside.  We aren't wanting it to fully cook.


When the chicken has just browned add the bottle of Greek vinaigrette to the Instant Pot.

I love using this short cut because it has all your seasonings in it which keeps things easy.


Add the half cup of kalamata olives to the Instant Pot as well as the...


Dried pasta.


Now add the vegetable (or chicken) stock to the Instant Pot.


You don't want to water to cover the pasta, just kind of come to the top.


Now turn your Instant Pot to MANUAL.


Set the timer for 10 minutes.


And make sure your valve is on SEALING not VENTING.

Allow the Instant Pot to come to pressure and cook.


Once the cooking time has elapsed you are going to do a quick release by turning the valve to VENTING.

Give everything a stir and you are ready to plate it up!

Instant Pot Greek Chicken Pasta Recipe:
*Prep Time: 5 min *Cook Time: 10 minutes *Servings: 4-6

PRINTABLE RECIPE

Ingredients:
  • 2 Boneless Skinless Chicken Breasts, cubed

  • 2 c Vegetable Stock (or chicken stock)
  • 1/2 c Kalamata Olives
  • Feta Cheese, crumbled
  • Salt and Pepper, to taste
Directions:
  1. Turn the Instant Pot to SAUTE.  Add a little oil to the insert and allow it to get HOT.  
  2. Add the chicken to the Instant Pot and season with salt and pepper.  Let brown, but not cook all the way through. 
  3. Add the dressing and olives to the Instant Pot.  
  4. Add the dried pasta and stock to the Instant Pot. 
  5. Turn the Instant Pot on MANUAL and set the timer to 10 minutes.  
  6. Make sure the valve is on SEALING and NOT VENTING.
  7. Let the Instant Pot come to pressure and cook.  
  8. Once the cooking time has elapsed do a quick release by turning the valve to VENTING
  9. Once the pressure has released remove the lid and give everything a nice stir.  
  10. Top with a little crumbled feta and parsley. 
  11. Serve and Enjoy!
