Easy Crockpot Chicken and Corn Chowder Recipe

You guessed it, we've reached the soup portion of this Crocktober extravaganza!  That's right, you can't have a Crocktober without soups, and kicking things off is one of our favorites!  Easy Crockpot Chicken and Corn Chowder.

Let's get started!



For this Easy Crockpot Chicken and Corn Chowder Recipe you will need a few simple ingredients:


  • 2 Boneless, Skinless Chicken Breasts
  • 6 Slices of Bacon, cooked and chopped
  • 1 1 lb bag of O'Brian Style Frozen Diced Potatoes
  • 1 12 oz bag of Frozen Corn
  • 3 Carrots, diced
  • 3 Celery Stalks, Diced
  • 1 Tbsp Garlic, minced
  • 4 c Chicken Broth
  • 2 c Water
  • 1 tsp Kosher Salt
  • 1 tsp Seasoning Salt
  • 1 tsp Ground Black Pepper
  • 1/8 tsp Dried Thyme
  • 3 Tbsp All Purpose Flour 
  • 1/2 c Heavy Whipping Cream


To begin, place the chicken in the bottom of the slow cooker.


Now add the diced carrots and celery.


Add the garlic.


Then, add the spices.


Now add the frozen corn and...


the frozen O'Brian potatoes.

I LOVE using these as a shortcut in my crockpot cooking.
They have great flavor because of the peppers and onions and no peeling and dicing!


Now you'll pour in the chicken broth and water.


Cover the slow cooker and set to LOW for 6-8 hours or HIGH for 4-5.


While the soup is cooking you will cook your bacon.

I like doing mine in the oven so I line a cookie sheet with foil and place the bacon on it.


Then I place it in a 425 degree oven for 10-15 minutes, depending on the thickness of your bacon.
I ended up cooking this for 12.


Place the bacon on a paper towel to drain while the Easy Crockpot Chicken and Corn Chowder Recipe finishes cooking.


When there is 30 minutes to 1 hour of cooking time left you are going to remove the lid to the slow cooker.


Remove the chicken and shred using two forks.


Return the shredded chicken back to the crockpot.


Now combine the all purpose flour with the heavy cream and mix it together until smooth.


Pour the slurry mixture into the slow cooker.


Give everything a good stir.


Put the lid back on the crockpot and cook for 30 minutes to 1 hour.

Taste for seasoning and make any adjustments you think it may need.
