Perfect Peanut Butter Cookies

Can you believe that it's December, and Christmas is on the horizon!?!  This is truly my favorite time of year and I can't wait to celebrate with you.  Usually I would be posting holiday meal recipes, but this I have decided to commit the blog to all things cookies and party foods!  To kick things off I will be sharing my Perfect Peanut Butter Cookie!




That's right, I said perfect!  Crunchy on the outside, soft and chewy in.  You and yours are going to go WILD over this recipe and I can't wait to share it with you so...

Let's Get Started!




Perfect Peanut Butter Cookies:
*Prep Time: 15 min *Cook Time: 10-12 min *Difficulty:  Easy  *Servings: 48 cookies

Ingredients:




  • 2 Sticks of Unsalted Butter, room temperature
  • 1 c Peanut Butter
  • 1 c Peanuts, chopped
  • 1 c White Sugar
  • 1 c Brown Sugar
  • 2 Eggs, slightly beaten
  • 2 1/2 c All Purpose Flour
  • 1 tsp Baking Powder
  • 1 1/2 tsp Baking Soda
  • 1 tsp Vanilla Extract
  • 1/4 tsp Salt




Now I know I usually have step-by-step pictures for my recipes, BUT I was so wrapped up in the Chritmas music and the moment, that I forgot to take pictures.  I will add them later, but for now here is a little video footage of me baking them.  


I really am sorry, but I wanted to get this recipe up for you.  Until I remake these (which won't be long) Here is how you make these AMAZING cookies!




Directions:
  1. Preheat oven to 375 degrees
  2. In a large bowl cream two sticks of room temperature, unsalted, butter with a kitchen-aid or hand mixer.
  3. Add the peanut butter, chopped peanuts, white sugar, brown sugar, slightly beaten eggs, and vanilla to the bowl and cream those together as well. 
  4. In a separate bowl, combine the flour, baking powder, baking soda, and salt.  
  5. Adding the flour, in three separate scoops, to the peanut butter mixture gently mix together.
  6. Scoop the cookie dough onto a baking sheet, in tablespoon-sized portions, about 2 inches apart.*
  7. Using a fork press a criss-cross pattern into the top.
  8. Place in the oven and bake for 10 to 12 minutes, until golden brown.
  9. Serve and Enjoy!
