Usually I would be posting holiday meal recipes, but this I have decided to commit the blog to all things cookies and party foods! To kick things off I will be sharing my Perfect Peanut Butter Cookie!

Perfect Peanut Butter Cookies:

Ingredients:
- 2 Sticks of Unsalted Butter, room temperature
- 1 c Peanut Butter
- 1 c Peanuts, chopped
- 1 c White Sugar
- 1 c Brown Sugar
- 2 Eggs, slightly beaten
- 2 1/2 c All Purpose Flour
- 1 tsp Baking Powder
- 1 1/2 tsp Baking Soda
- 1 tsp Vanilla Extract
- 1/4 tsp Salt
Now I know I usually have step-by-step pictures for my recipes, BUT I was so wrapped up in the Chritmas music and the moment, that I forgot to take pictures. I will add them later, but for now here is a little video footage of me baking them.
I really am sorry, but I wanted to get this recipe up for you. Until I remake these (which won't be long) Here is how you make these AMAZING cookies!
Directions:
- Preheat oven to 375 degrees
- In a large bowl cream two sticks of room temperature, unsalted, butter with a kitchen-aid or hand mixer.
- Add the peanut butter, chopped peanuts, white sugar, brown sugar, slightly beaten eggs, and vanilla to the bowl and cream those together as well.
- In a separate bowl, combine the flour, baking powder, baking soda, and salt.
- Adding the flour, in three separate scoops, to the peanut butter mixture gently mix together.
- Scoop the cookie dough onto a baking sheet, in tablespoon-sized portions, about 2 inches apart.*
- Using a fork press a criss-cross pattern into the top.
- Place in the oven and bake for 10 to 12 minutes, until golden brown.
- Serve and Enjoy!
