Crockpot BBQ Chicken Burritos

So as you all know by now, I have been trying to eat pretty healthy.  HOWEVER, I'm not dead!  I love what we call "Fun Food", but what I am learning is that not all "Fun Food" is necessarily bad for you.  Take my Crock Pot Barbecue Chicken Burritos for instance.


All of the fun flavors of BBQ that you love without the guilt!  I know you and your family is going to love it so...

Let's Get Started!
Crock Pot Barbecue Chicken Burritos:
*Prep Time: 5 min *Cook Time:  4-6 Hours *Difficulty:  Easy  *Servings: 6-8 Burritos

Ingredients:


  • 1 lb Bonless, Skinless Chicken Breasts
  • 1 15 oz Can of Black Beans, drained and rinsed
  • 1 c Frozen Corn (I like the roasted variety)
  • 2 c BBQ Sauce, sugar free
  • Whole Wheat Tortillas
  • Lettuce



To begin place the chicken into the bottom of your crockpot.


Next season them with a little salt and


pepper.


Now you can pour in the corn,


black beans,


and barbecue sauce.
For the recipe, it would be best to use a sugar free BBQ sauce.  I realize this is not sugar-free, but I wasn't going to go out and buy a new bottle when I have a full bottle in my pantry.

Spread it all over the chicken,


pop on the lid, and turn it on HIGH for 4 hours (LOW for 8).


Once the chicken has fully cooked you will remove it from the sauce and


shred it with your forks.


Return it to the sauce. 
Stir everything together and you are ready to serve.  


I like to heat my tortillas through over the open flame of my hub, but you can warm them up on in the microwave or in a dry pan if you wish.


Once you get the tortillas cooked, place it on a flat surface,


lay down a leaf of lettuce,


Add a scoop of the barbecue chicken filling,


and roll. 


By simply using a sugar-free option for the sauce, you have a beautiful, delicious, and almost guilt-free Crock Pot Barbecue Chicken Burritos.  Lean protiens, veggies, and whole grains make it perfect and so very easy!  I know everyone is going to be raving about these so get in the kitchen and get this recipe crackin' tonight!

Directions:
  1. Add the chicken, black beans, corn, and barbecue sauce to the crock pot. 
  2. Spread everything around so that the chicken breasts are fully coated.  
  3. Put the lid on the crock pot and turn it to HIGH for 4 hours or LOW for 8 hours.  
  4. Remove the chicken from the crock pot and shred with forks. 
  5. Return the chicken to the crock pot and stir everything together.  
  6. Assemble your burrito.
  7. Serve and Enjoy!
