Crockpot Irish Beef Stew Recipe

If you read my post on Ginger Sesame Grilled Chicken Salad, you'll know that I've really been into seasonal living.  I've been trying to slow down, and enjoy all the little reason to celebrate life every day.  So for the first part of March, I decided to make one Irish meal a week leading up to St. Patrick's Day.  Last week I made this exquisite Crock Pot Irish Beef Stew Recipe.

It's rich, flavorful, hearty, everything a beef stew should be.  And the broth...OH.EM.GEE!  I know you're going to gobble this recipe up, so...

Let's Get Started!
Crock Pot Irish Beef Stew:
*Prep Time:  10 minutes *Cook Time: 8 Hours *Difficulty:  Easy *Servings:  6-8

Ingredients:

All of the ingredients you need for the Irish Beef Stew.
  • 2 lb. of Stew Beef
  • 3 Parsnips, diced
  • 3 Carrots, diced
  • 1 Onion, diced
  • 6 Red Potatoes, quartered
  • 4 Cloves of Garlic, sliced
  • Guinness Beer, 1 pint
  • 6 c. Beef Stock
  • 1/4 c. Worcestershire Sauce
  • 1 tbsp. Kosher Salt
  • 1 tsp. Ground Black Pepper
  • 1 tsp. Dried Thyme
  • 2 c. Frozen Peas
  • 1/4 c. Cornstarch
  • 1/4 c. Water

To begin, you'll season the stew beef with salt and...

Pepper.

Browning the stew beef in a skillet.

Next, place a saute pan over medium/high heat, and add a little oil.
In batches, brown the stew meat for 2-3 minutes on all sides.

Adding the browned stew beef to the crock pot.

Once the stew meat has browned, add it to the crock pot.

Deglazing the skillet with the beer.

Now pour the Guinness beer into the hot saute pan to deglaze it.
Make sure you take a wooden spoon and scrape the bottom of the pan to get up all of those delectable bits of flavor.

Adding the beer from the skillet to the crock pot.

Then pour seasoned beer into the crock pot, over the beef.

Adding the potatoes to the crock pot.

Time to add the potatoes,

Parsnips being added to the crock pot.

Parsnips,

Carrots being added to the crock pot.

Carrots,

Onion being added to the crock pot.

And onion.

Dried Thyme being added to the crock pot.

Then add the dried thyme,

Salt being added to the crock pot.

salt,

Pepper being added to the crock pot.

and ground black pepper.

Sliced garlic being added to the crock pot.

Oh!  Don't forget the sliced garlic.

Worcestershire Sauce being added to the crock pot.

Now you can pour in the Worcestershire sauce into the crock pot.

Beef Bullion being added to the crock pot.

I didn't have any beef broth or base on hand, so I added these beef bullion cubes to the crock pot.

Water being added to the crock pot.

Then I added 6 cups of water.
Obviously if you have beef stock on hand you would add that instead.

All of the ingredients cooking in the crock pot.

Place the lid on your crock pot and set it on LOW for 8 hours.

Frozen peas being added to the crock pot.

After 8 hours you will add the frozen peas and

Corn starch slurry being added to the crock pot.

Cornstarch slurry.
A cornstarch slurry is equal parts cold water and cornstarch mixed together.
It's commonly used as a thickening agent in things like gravy.
I personally love the glossy sheen it gives as opposed to all purpose flour.

The crock pot cooking for one more hour on high.

Now bump the crock pot up to HIGH, place the lid on it, and cook for one more hour.

Now you are ready to serve!

Just look at that!  Big, juicy, chunks of beef. Tender root vegetables. Rich, flavorful broth.  This Crock Pot Irish Beef Stew Recipe is absolute perfection.  And because it was made in a slow cooker, it couldn't have been easier.

I like to add a dollop of horseradish to my bowl and some chopped fresh parsley.  I just....I can't even.  I HAVE to go in for a bite!  MMMMMMMMMMMMM...... So, celebrate March with me and give this Crock Pot Irish Beef Stew a try TONIGHT!
