Winter Salsa

Winter Salsa

Even though I am not Mexican, I love celebrating Cinco de Mayo.  Basically it's because it gives me the freedom to eat as much Mexican food as I want!  But let's be honest, does one REALLY need a reason to eat Mexican?  No, I think not.  *lol*

ANYWAY, the one downside to Cinco de Mayo being in May is that the tomatoes are not yet ripe enough to make really good fresh salsa.  That's why I have come up with the great "Winter" Salsa!  It is so flavorful and filling, I dare say it might be a meal all on it's own!  I can't wait to share it with you so...

Let's get started!

Winter Salsa:
*Prep Time:  5 min.  *Cook Time: --  *Difficulty:  Easy  *Servings: 4-6 c

Ingredients:


  • 1 28 oz. Can of Diced Tomatoes
  • 1 15 oz. Can of Black Beans (drained and rinsed)
  • 1 Red Onion, diced
  • 2 c. Frozen Corn
  • 1 Lime, juiced
  • 4-6 Cloves of Garlic, minced
  • 1 tsp. Chipotle Chili Powder
  • 1 tsp. Salt
  • 2 tbsp. Fresh Cilantro, chopped


To begin, open the can of diced tomatoes and pour them into a mixing bowl.


Now drain and rinse the black beans.


Then add the black beans and the frozen corn to the bowl.
Don't worry about the corn being frozen.  It thaws very quickly.


Now mince the garlic and add it to the bowl as well.


Next the onion.


The lime.


The chipotle chili powder.


The salt.


And finally the cilantro.


Mix it all together and...

Delicious Winter Salsa packed full of that great Mexican flavor you love!  I promise no one will be saying "Ew, this came out of a can!"  So this Cinco de Mayo don't stress over not-so-ripe tomatoes ruining your salsa.  Give this Winter Salsa a try!  You won't regret it!

Ingredients:

  1. In a mixing bowl, combine the tomatoes, black beans, corn, garlic, onion, lime juice, chipotle chili powder, salt, and cilantro.
  2. Mix together.
  3. Serve and Enjoy!
