Asparagus is probably one of the favorite vegetables in my family. I'm pretty sure I could serve it every night and no one would complain. My personal favorite way to eat it is roasted. A little olive oil, some lemon pepper seasoning, salt, PERFECTION. However, just when I thought roasted asparagus couldn't get any better, I discover that people are wrapping it is BACON!! WHAAAA!?! I mean honestly, when has bacon NOT made something better? So I gave it a try the other night and oh my stars, it was delicious!
This was so simple and I can't wait to show you how I did it!

Bacon Wrapped Asparagus:
*Prep Time: 5 min. *Cook Time: 10-15 min. *Difficulty: Easy *Servings: 6 Bundles
Ingredients:
- 1 16 oz. bunch of fresh Asparagus
- 5 slices of THIN CUT Bacon
- 2-3 tbsp. Extra Virgin Olive Oil
- Salt and Pepper to taste
To begin preheat the oven to 400 degrees.
Secondly, cut the strips of bacon in half.
As you can see in this picture I did not use thin cut bacon. Because of that the bacon did not get crisp like I like it. If you are not particular about this fact, go ahead and use the thick cut.
Next, trim the woody ends from the asparagus.
Thirdly, take 10-13 stalks of asparagus and wrap them with the bacon and place seam-side down in a baking dish.
Drizzle a little oil over the bundles.
Season with salt
And pepper.
It will look like this when you are finished.
Place in the oven and bake for 10-15 minutes until the asparagus is tender and the bacon is crisp.
Look at how beautiful that is!
As the bacon fat renders in the oven it adds a whole other dimension to the flavor of this green delicacy. This is not only delicious, but it is elegant too.
