French Onion Soup


Recently my husband has been traveling a lot.  This means that there have been many weekends where my mother-in-love and I are home alone.  So to keep myself occupied, and to test out some recipes, I have been entertaining friends.  I love getting together with my girlfriends.  You can guarantee that there will be lots of laughing, eating, and some form of a British television series in the background!

The best part about low-key entertaining with friends is that is doesn't have to be anything fancy.  Take my French Onion Soup for example.  Yes, it may sound fancy, but with only a few simple ingredients this elegant soup is perfect for a delicious night in with your friends.

Let me show you how I make it...

French Onion Soup:
*Prep Time: 15 minutes  *Cook Time: 1 hour  *Difficulty:  Easy  *Servings: 6-8 servings

Ingredients:



  • 8 Onions, sliced
  • 4-6 Cloves of Garlic, Minced
  • 1/2 c. Unsalted Butter
  • 1/4 c. Extra Virgin Olive Oil
  • 1 tsp. Dried Thyme
  • 1 Tbsp cornstarch
  • 2 c. Dry White Wine
  • 4 c. Beef Stock
  • 1/4 c. Balsamic Vinegar
  • Provolone Cheese, sliced
  • Croutons
  • Salt and Pepper, to taste


So, to get things started you are going to want to peel and slice your onions.
When slicing the onions you will not want them too thin or too thick. Maybe a 1/4 inch wide.


Then place a large soup pot over medium/high heat.
When the pot is hot add the butter and olive oil.
Once the butter has melted, add the onions.


To the onions add the garlic, thyme, salt, and pepper.
Stir so that everything is coated in the oil and spices.


Place the lid on the pot and turn the heat down to medium/low.
You are going to caramelize the onions.
This will take about 30 minutes.
You will need to stir occasionally.


After 30 minutes the onions will look a little something like this.


Now it is time to add the wine...





Cornstarch slurry (Add the cornstarch to a few tbsp of cold water and mix together)...


And balsamic vinegar.


Give it a stir and allow the "sauce" to thicken and the alcohol flavor to cook out.


Time to add the beef stock along with some salt and pepper.


Raise the heat to a solid medium and bring the soup to a simmer.
Place the lid on the pot, slightly vented, and let simmer for 30 minutes.
Taste for seasoning


While the soup is simmering, and the flavors are all coming together, take this time to make some delicious homemade croutons.

Cut up some leftover bread into large cubes.
Place on a baking sheet and drizzle with a little olive oil.
Place in a 375 degree oven for 15-20 min until golden brown.

HOWEVER, if this is not your jam you can totally use store bought croutons.  I do it all the time.


Now we can assemble to soup!

You are going to want to make sure you use oven proof bowls for this recipe.

Ladle in some soup and top with croutons.



Next pile, and I do mean PILE, on the cheese!
After that, place it under the broiler till it gets all brown, bubbly, and gooey.


And there it is!


This soup is warm, hearty, robust, absolutely out of this world!  And by serving it in these cute little soup mugs, it is perfect for sitting on the couch with your friends, laughing, eating, and having a good time.  So the next time you want to invite the gang over for a light dinner and great movie, give this French Onion Soup a try!  You won't regret it!
