We've not had the massive amounts of snow that many of you are enduring, but we re finally starting to get our fair share. I will confess that I don't really mind it though. Why you ask? Because this is the season where I get to indulge in some of those heavier, heartier meals. You know the ones. Pure comfort food. And for me, it doesn't get any more comforting that a good Chicken Parmesan.
It's saucy, and crunchy. Cheesy and tender. Mmmm....It's truly divine and not nearly as difficult to make as you may think. In fact, I dare say you can even whip this up on a week night. I know you are going to love it, so let's get started!
Chicken Parmesan:
*Prep Time: 15 min. *Cook Time: 45 min. *Difficulty: Easy *Servings: 6-84
Ingredients:
When I make chicken parmesan, I like a thinner, crisper piece of chicken. So I cut my chicken breast in half.
I place my hand on the top of the breast and gently work my knife through. I open it like a book and then...
Cut that into two pieces.
Then I place them into a resealable bag and, using a mallet or a rolling pin, I gently pound them out to an even thickness.
Next you will need to get two shallow dishes.
In one pan you will crack and whisk the eggs. In the other pan you will add the breadcrumbs, 1/4 c. grated parmesan, and a little salt and pepper.
Now you will place a heavy skillet over medium/high heat and cover the bottom with oil.
Take one of the chicken cutlets and dip in the egg.
Cover both sides.
Then dip it into the flour.
Cover both sides.
Then brown on both sides for 4-6 minutes per side.
Next, in a baking dish, place a thin layer of your favorite marinara sauce on the bottom.
I am using some of my homemade sauce, but you can certainly use your favorite jarred sauce here. There are many great varieties on the market.
Place the chicken into the dish.
Place a little more of the sauce over the top of the chicken.
Shred the cheeses,
And sprinkle over the top of the chicken as well.
Place, uncovered, into a 350 degree oven for 30 minutes or until the cheese has melted and started to become brown.
And there you have it! A DELICIOUS homemade Chicken Parmesan! Traditionally this is served with some pasta, but I like to serve my with garlic parmesan mashed potatoes and a nice salad. This is going to be a real crowd pleaser and I KNOW it is going to make some regular appearances on your dinner table this winter. So give it a try tonight! You will be so glad you did!
