Here we are at the mid-point of the month, and if you are like me, it is time to start making the most of that grocery budget. Sure, I splurged a little when that envelope was full, but now that things are a little tighter it's time to get creative. However, the one thing I WILL NOT give up to save a buck is flavor. Tonight's dinner was a perfect example of how a well stocked pantry can deliver a first class meal that is SUPER easy on your budget. With a few simple ingredients I whipped up an Italian feast and I can't wait to share it with you!
Sausage, Spinach, and Cannelloni Bean Sauté:
*Prep Time: 5 minutes *Cook Time: 10 Minutes *Difficulty: Easy *Servings: 4-6
Ingredients:
- 1 lb. of smoked sausage
- 1 box of frozen spinach, thawed
- 2 cans of cannelloni beans
- 1 can of diced tomatoes
- 2 cloves of garlic, minced
- 1 c. of Chicken broth
- 3 tbsp. oil
- 1 tsp. oregano
- Salt and pepper to taste
Tools:
- Cast Iron Skillet
- Colander
- wooden spoon
Let's Get Started!
First things first, you are going to slice your sausage.
I like to cut mine on the bias, or at an angle.
I just think it looks nice. :)
When you are cooking on a budget it's the little things that make the difference.
Heat up your skillet and add oil.
Brown your sausage in the skillet and set aside.
When you are wanting to cook Italian the key thing to remember is the colors of the flag, WHITE, GREEN and RED.
Here my white is my cannelloni beans.
Drain your beans and...
Add to the skillet.
Add your chicken broth, or in my case, 1 cup of water and...
1 tsp. of chicken bouillon.
Now for the green. In this recipe I am using spinach.
While the beans are cooking down a bit,
place your thawed spinach in a clean dish towel and...
Wring out all the excess liquid.
Sprinkle the spinach in the beans...
Add your sausage...
OPPS!! I SHOULD have added the garlic right after the beans, but I forgot.
Oh well, just add it now. :)
Now for the red element of the flag.
The tomatoes.
Drain your tomatoes and...
Add to the skillet.
Add oregano, stir, and taste for seasoning.
Add any salt and pepper you may need and...
Let simmer for 7 to 10 minutes.
The flavors will come together and the beans will absorb the chicken broth.
It will be amazing!
Look at that! Beautiful!
I love serving things at my table from an iron skillet.
Shave a little parmesan cheese over it and serve up with some garlic toasts and you have fed a family of 4-6 for around $5 and in 15 MINUTES!! It doesn't get any better than that! I hope this help you get over you mid-month grocery budget hump and as always...

- Preheat the cast iron skillet
- Slice sausage.
- Add sausage to skillet and brown on both sides.
- Remove browned sausage from skillet and set aside.
- Drain beans and add to skillet.
- Add garlic.
- Add chicken broth to beans and garlic.
- Place thawed spinach in a clean dish towel and wring out the excess liquid.
- Sprinkle spinach in the skillet.
- Train tomatoes and add to skillet.
- Add oregano.
- Stir, taste for seasoning, and add salt and pepper accordingly.
- Let simmer for 5-7 minutes.
- Serve and ENJOY!
*This goes great with some shredded parmesan and garlic toasts.
