Roasted Lemon and Proscuitto Crusted Chicken with New Potaotes and Asparagus


We all have those full proof, go-to meals that we fall back on time and time again.  For me it is things like spaghetti, stir-fry, and tacos.  However, sometimes those go-to staples just won't do.  Perhaps it's a special occasion.  Maybe you are going to have unexpected company.  It can even just be a case of wanting to spice things up for dinner.  Whatever the reason, it is good to have a inexpensive show stopper in your back pocket!  In my house it is Roasted Lemon and Prosciutto Crusted Chicken with New Potatoes & Asparagus
Fancy doesn't have to be fussy and this meal is simple, healthy, and delicious!  I can't wait to share with you how I make it!
Let's get started...
Roasted Lemon & Prosciutto Crusted Chicken with
New Potatoes and Asparagus:
*Prep-Time:  5 minutes  *Cook Time:  50 minutes  *Difficulty:  Easy  *Servings:  4
Here is what you will need:
  • 4 boneless, skinless chicken breasts
  • 4 slices of prosciutto or bacon
  • 2 lbs. new potatoes
  • 2 lbs. frozen asparagus, thawed
  • 1 lemon
  • Extra virgin olive oil
  • Salt and pepper
Tools you will need:
  • Baking dish
  • Fork
Pre-heat your oven to 475 degrees.


Wash and scrub your new potatoes.  Poke holes in the potatoes with a fork and
drizzle them with olive oil. Season with salt and pepper and toss.


Put them in the pre-heated oven for 25 minutes.


After 25 minutes, remove from oven and test with a fork. 
 If the fork goes in and out smoothly they are just right.


I don't know about you, but I could just eat that! 


Now you will lay your chicken over the potatoes and season well with salt and pepper.


Cover each piece of chicken with a slice of prosciutto. 
If you do not have prosciutto, or if it is not in your budget, 
you can easily substitute it with bacon.


Place a lemon slice on each chicken breast and...


Drizzle with olive oil.


Return the baking dish to your oven and set your timer for
15 minutes.
While the chicken is cooking, drizzle olive oil over the asparagus
 and season with salt and pepper.


After 15 minutes, remove the baking dish from the oven, and add the asparagus
on either side of the chicken and potatoes. 
Squeeze the left over lemon juice over the rest of the dish, add the pieces too, and return to the oven for 10 more minutes.

Directions:

  3. Score with a fork.
  4. Drizzle with olive oil, season with salt and pepper, and toss.
  5. Place in a baking dish.
  6. Put in preheated oven for 25minutes.
  7. After 25 minutes, remove from oven, and test with fork.  If fork comes out easily, they are perfect. 
  8. Place chicken on top of the potatoes.
  9. Season with salt and pepper.
  10. Place a slice of prosciutto over each piece of chicken.
  11. Place a slice of lemon on each piece of chicken.
  12. Drizzle with olive oil and place in oven for 15 minutes.
  13. While chicken is cooking drizzle olive oil on asparagus, season with salt and pepper, and toss.
  14. After 15 minutes, remove the baking dish from oven and place asparagus on either side of chicken. 
  15. Squeeze remaining lemon juice over dish and add pieces.
  16. Place back in the oven and cook for another 10 minutes. 
  17. Remove from oven, serve and ENJOY!
