Cravings.  They can be the bane of all existence, can't they?  The other day Studhubs was craving burgers, but I was craving pizza.  Neither of us was willing to give on the matter, so I decided to get creative and make these Caprese Beef Patties w/a Balsamic Glaze.

Using only a few humble pantry items, this fun play on a caprese salad combines the juiciness of a great burger with the flavors of an amazing pizza.  I know you and your family are going to LOVE these, so...

Easy Beef Chow Fun Recipe

When I tell people that I'm trying to eat healthy I usually get one of two responses.  One, "Oh I would love to do that, but it is just too expensive."  And two, "Man, that would be nice, but I just don't have time."  Well, I'm here to tell you tell you that healthy eating can be both inexpensive and quick.  Take my Easy Beef Chow Fun for example.

I'm not claiming that this is traditional, more like my West Virginia take on it, but packed full of veggies and protein, this delightful Asian meal is full of flavor and ready in no time!  I can't wait to share it with you so...

Listen to Your Body...

Dear Kitchen Family,

Can we talk about food for a second?

This morning I woke up craving toast.  Not avocado toast, not sweet potato toast (yes, that's a thing), just good ol' fashioned toast.  You know, the crispy kind, with butter on it.  Of course my initial reaction was to deny myself because that's what society and the health food industry has taught me to do.  Carbs are bad...butter is bad...you will get fat.  But this is why we really need to educate ourselves about food.  Now I am no expert.  I am not a nutritionist.  Heck, I'm not even skinny, but I can tell you that while on this journey to health I have learned this.  A calorie is a calorie.  Fat is fat.  It's the kinds of calories and fats that you eat that are important.

Sweet Potato Hash with Poached Egg Recipe

Crock Pot Chicken Pho Recipe

Being that I live in West Virginia, my choice of exotic and trendy foods is pretty limited.  One of the dishes that's all the rage right now is Pho.  Its a Vietnamese noodle soup, with one of the most interesting flavors your will ever experience.  I've been craving it recently, but unfortunately there's not really any place around here to get it.  No worries though, I just make my own.  I've already shared my Beef Pho Recipe, my Vegetarian Pho recipe, so I was thinking that it would be a good time to do a Chicken Pho.

I had a lot going on over the weekend, so I decided to try and make this in my slow cooker, and I was BLOWN AWAY at how well it turned out!  I can't wait to share this Crock Pot Chicken Pho with you so...

Chipotle Chicken Sausage Skillet with Cauliflower Rice

It's Thursday.  It's raining.  I've been running around like a chicken with my head cut off (what a horrible expression).  I DO NOT WANT TO COOK.  In fact, I want a hot dog from Sonic. I'm just keeping things real with you here. However, I'm committed to making better choices for myself.  Therefore, I went to the fridge to see what I could easily throw together.  That's when it happened.  Clean eating perfection.  Chipotle Chicken Sausage Skillet with Cauliflower Rice.

This was absolutely delicious and it was ready and on my table in 20 minutes.  Oh, and did I mention its a ONE PAN MEAL!?!  I know you are going to love it so...

I'm going to be completely transparent with you for a moment.  I really struggle with side dishes.  One pot meals, no problem.  Entrees, all day long.  But side dishes, yeah I have a hard time with them.  Since I've been trying to eat cleaner, I'm finding that sometimes the most simple ingredients can make the best accompaniment to my meals, and cheese truly makes everything better.  Don't believe me?  Check out my Roasted Parmesan Carrots.

Simple Cabbage Soup Recipe

Over the weekend we finally received our first real snow of winter, and I couldn't be more excited!  And with that first snow, you can guarantee that soup is going to be on the menu.  Usually I would go for something like my Perfect Chili Recipe or my Healthy White Chicken Chili Recipe, but since I was on my 10 day detox for The Daniel Plan, I had to change it up a little.  That's when I decided to try something I had never made before, and this delicious Simple Cabbage Soup Recipe was born.

A bowl of cabbage soup, with a black background, and the title written above.

I was totally inspired by a picture that my friend, Linda posted on Facebook, and though I'm not sure this is the "right" way to make cabbage soup, I AM sure that its delicious and super good for you. I can't wait to share with you how I made it so...

Healthy Oven Roasted Chicken Brussel Sprouts and Sweet Potato Dinner

We all lead busy lives.  No one is questioning that.  If we're honest, THAT is what has contributed to the convenience food market more than anything.  I'm no different.  But, things are changing.  We're all becoming more aware of what we are putting in our bodies, and many of us are returning to the art of cooking with whole foods.  The good thing is it doesn't have to be time consuming.  Take my Healthy Roasted Chicken, Brussel Sprouts, and Sweet Potato Dinner with a Mustard Pan Sauce for example.

Full of vitamins, protein, and fiber, this meal is ready in 20 minutes and couldn't be easier to prepare. I know you are going to love it so...

You may remember around this time last year I published the post How To Turn Your Happy Planner Into a Blog Planner.  I've had several people say they enjoyed the post, and requested an updated version.  I've changed a few things around since then, so I thought I would share with you my new system using my Erin Condren LifePlanner.

A picture of my Eric Condren Planner with the title above and pens off to the left.

I feel like after a lot of trial and error I have FINALLY found a blog planning system that works great for me, and I can't wait to share with you.  So...
