Chocolate and Butterscotch Chip Cookies


Have you ever had one of those days where NOTHING seems to go right, and you just need a little something to make your heart happy?  That was my day yesterday.  I know this is not what you are SUPPOSED to do, but when I am sad, I like to make something comforting, and one of my go-to's in my mom's Chocolate and Butterscotch Chip Cookies.  Growing up, she was the only one who made her cookies this way, and they are my favorite.  I can't wait to share this recipe with you, so...

Let's Get Started!

Chocolate  and Butterscotch Chip Cookies:
*Prep Time: 10 min.  *Cook Time:  10 min.  *Difficulty:  Easy *Yields: Approximately 24 cookies

Ingredients:


  •  2 1/4 cups all-purpose flour

  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup (2 sticks) butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • large eggs
  • 1 c. Chocolate Chips
  • 1 c. Butterscotch Chips
To begin, preheat the oven to 375 degrees.  

Now, the key to soft, chewy cookies is room temperature ingredients.  The morning you are planning to bake, set everything out to come to room temp.  This means your eggs and butter.  Truth me, it WILL make a difference. 


Once the eggs and butter have come to room temperature, add the sugar, brown sugar, and butter to a mixing bowl.


Gently mix them together till they are well incorporated and creamy.
This is what is known as "creaming the butter."


Now add the eggs to the sugar and butter mixture.


Gently mix that together as well.


Now you can add the flour, baking soda, and salt.


GENTLY mix that together.
Be very careful not to fling flower everywhere.
I may or may not have learned this from experience.  *lol*


Now you can add the chocolate and butterscotch chips.


Gently mix them into the dough.


Place the dough onto your baking sheet in tablespoon increments.


Place in a 375 degree oven and bake for 10 minutes.
Remove from the oven, and let cool for 10 minutes on the pan.


Next move to a cooking rack to finish cooling.
And just so you know, it is TOTALLY fine to snitch one while it is still piping hot.  I wouldn't considering human if you didn't.  I personally may have snitched two.  :)


And there you have it!  My mom's Perfect Chocolate and Butterscotch Chip Cookies.  They are warm, gooey, perfectly sweet, and slightly salty.  Heaven in every bite!  So if you need a little pick me up today, or you just want a treat, get in the kitchen and make these TONIGHT!

PRINTABLE RECIPE

Ingredients:

Directions:
  1. Set out the eggs and butter to come to room temperature. 
  2. Preheat the oven to 375 degrees. 
  3. In a mixing bowl, add the sugar, brown sugar, and butter.  Gently mix them together with a hand mixer.  
  4. Add the eggs and gently mix them in with the sugar and butter. 
  5. Add the flour, baking soda, and salt, and GENTLY mix together, careful not to throw flour everywhere.  
  6. Add the chocolate and butter scotch chips and gently mix them in.  
  7. Place tablespoon sized dollops on each baking sheet and bake for 10 minutes.  
  8. Remove sheet from oven and let cookies cool for 10 minutes them place on cooling rack.
  9. Serve and Enjoy!
