Creamy Homemade Potato Soup Recipe

The new year has left us all cold, tired, and broke!  Inflation is at an all time high and we are all pinching pennies to make our budgets work.  So today I am going to be sharing with you one of my favorite "pantry meals", Creamy Homemade Potato Soup.

 This recipe is warm, hearty, inexpensive, and best of all it only requires a few, simple ingredients that you probably already have on hand.  Its hands down the BEST potato soup you will every eat.

Here's how I made it!


TIPS FOR THIS RECIPE:

Q: Do I have to use russet Potatoes? 

A: You can use any kind of potato you have on hand.  I recommend russets for this because they release the most starch which makes for a creamier soup. 

Q: Do have to use carrots, celery, onion, and garlic in this potato soup recipe?

A: No, this is your soup and you can make it any way you choose.  However, that added vegetables make for a more flavorful broth and in turn make for a tastier soup.  You can easily omit the carrot, but I wouldn't take the other out.  You can always replace the onion and garlic with powders. 

Q:  What if I don't have any stock?

A:  That is totally fine.  I like using stock because it adds more flavor, but you can also use plain water and it will work. 

Q: Can I use chicken stock instead of vegetable stock?

A: Of course!

Q: Can I use anything else besides half and half?

A: 100% You can use heavy cream or plain milk.  I will say that if you are using plain milk you may want to cut the amount by half because it will not be as creamy as say using the half and half.  

Q: Can this be made vegan?  

A: You know it!  You can of course use plant-based half and half or cream, coconut cream, vegan sour cream, or cashew cream.  All of those options will work great in this recipe! 

One last thing.  As I mentioned I tried to keep this recipe as minimal and cost effective as possible, but if you have it on hand or have the extra in your budget add 1 cup of sour cream in with the half and half.  It will take this Creamy Homemade Potato Soup recipe to the next level!
