All the great flavors of a classic reuben sandwich without and of the animal products. This Vegan Mushroom Reuben Sandwich Recipe is going to blow your mind so..
Let's Get Started!
For this Vegan Reuben Sandwich Recipe you are going to need a few simple ingredients:
- 2 Oyster Mushroom Clusters (or 4 portobello caps)
- Corned Beef Seasoning (recipe below)
- Vegan Thousand Island Dressing (recipe below)
- Sauerkraut
- Vegan Cheese (I prefer Chao Cheese)
- Rye Bread
Preheat the oven to 400 degrees.
I prefer to use cast iron for this, but any pan would do.
You will need to press another heavy pan on top of the mushrooms.
Cook for 2 minutes, flip and cook the other side for 2 minutes.
Here is what you will need for that blend:
- 2 Tbsp Coriander
- 2 tsp Peppercorns
- 1 Tbsp Mustard Seed
- 1 tsp anise seed
- 4 Bay Leaves
- 1 tsp Crushed Red Pepper Flake
Put everything in a spice grinder and grind until finely milled.
My mouth is already drooling.
It absorbs the excess oil in the pan with all the yummy bits.
Here is the recipe:
- 1 cup Vegan Mayo
