Vegan Mushroom Reuben Sandwich Recipe

As many of you already know John (Studhubs) and I have gone vegan.  In fact it's been 8 month since we made the transition and there is no going back.  One of the questions I get ask most is "What do you eat?" My answer is always "anything I want!" I simply plantify it. This Vegan Mushroom Sandwich Recipe is the perfect example of that.  



All the great flavors of a classic reuben sandwich without and of the animal products.  This Vegan Mushroom Reuben Sandwich Recipe is going to blow your mind so..


Let's Get Started!

For this Vegan Reuben Sandwich Recipe you are going to need a few simple ingredients: 



  • 2 Oyster Mushroom Clusters (or 4 portobello caps)
  • Corned Beef Seasoning (recipe below)
  • Vegan Thousand Island Dressing (recipe below)
  • Sauerkraut
  • Vegan Cheese (I prefer Chao Cheese)
  • Rye Bread 
Preheat the oven to 400 degrees.


To begin you will need add some oil and butter in a pan and allow it to get HOT!  

I prefer to use cast iron for this, but any pan would do. 


Place your oyster mushrooms stem side down in the pan. 


Now this is where things get magical.  We are going to do a pressing method that I learned from Wicked Kitchen.  This method for cooing mushrooms changes EVERYTHING!  By pressing the water out of the mushrooms you are changing the texture.  They becoming more meaty and are absolutely fantastic. 

You will need to press another heavy pan on top of the mushrooms.  
Cook for 2 minutes, flip and cook the other side for 2 minutes. 


Next you will need to season the mushrooms the corned beef seasoning.  

Here is what you will need for that blend:
  • 2 Tbsp Coriander
  • 2 tsp Peppercorns
  • 1 Tbsp Mustard Seed
  • 1 tsp anise seed
  • 4 Bay Leaves
  • 1 tsp Crushed Red Pepper Flake
Put everything in a spice grinder and grind until finely milled.


After 2 minutes season the top side and flip again.  Do one more press for 2 minutes. 


Place your pan into the preheated oven for 10-15 minutes  


This is where you will want to get your cheese ready. 


your mushrooms should look a little something like this when they come out of the oven.  
My mouth is already drooling. 


Place the cheese on the mushrooms so it can begin melting. 


To toast the rye bread I like to place it in the hot pan.  

It absorbs the excess oil in the pan with all the yummy bits.

Place your mushroom and cheese on the bottom slice of the bread. 


Add the sauerkraut. 


Add the vegan thousand island dressing.  

Here is the recipe:
  • 1 cup Vegan Mayo
  • 1 Tbsp Apple Cider Vinegar
  • 2-3 Tbsp Sweet Pickle Relish 
  • 1 tsp Low Sodium Soy Sauce
  • 3/4 tsp Yellow Mustard
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Onion Powder
  • 3 Tbsp Ketchup
  • Salt and Pepper to taste

Place the top on your sandwich and you're ready to eat!  

I can't express to you how much I LOVED this Vegan Mushroom Reuben Sandwich Recipe!  It's so nice to know that no matter my food preferences are I can always enjoy the foods I love.  Oh and John even said he might possible like this version better than the real thing!  I know you're going to love it so get in the kitchen and give it a try tonight!

Vegan Mushroom Reuben Sandwich

Ingredients:

Corned Beef Spice Blend
  • 2 Tbsp Coriander
  • 2 tsp Peppercorns
  • 1 Tbsp Mustard Seed
  • 1 tsp anise seed
  • 4 Bay Leaves
  • 1 tsp Crushed Red Pepper Flake
Homemade Vegan Thousand Island Dressing
  • 1 cup Vegan Mayo
  • 1 Tbsp Apple Cider Vinegar
  • 2-3 Tbsp Sweet Pickle Relish
  • 1 tsp Low Sodium Soy Sauce
  • 3/4 tsp Yellow Mustard
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Onion Powder
  • 3 Tbsp Ketchup
  • Salt and Pepper to taste

Instructions:

  1. Preheat the oven to 400 degrees.
  2. Place a pan over medium/high heat, add oil and butter, and allow to get HOT.
  3. Place the oyster mushrooms stem side down in the pan.  Place another heavy pan on top of it. Press down and allow the mushrooms to cook for 2 minutes. 
  4. Flip the mushrooms, place the pan back on top, press down and cook for 2 more minutes.  
  5. Season the mushrooms with the corned beef seasoning and flip.  Place the pan back on top and cook for 2 minutes.  
  6. Repeat the process above.  
  7. Place the mushrooms in the 400 degree oven for 10-15 minutes. 
  8. Assemble the reuben sandwich.
  9. Serve and Enjoy!
