Rib eyes with Gorgonzola Cheese Sauce

It's Friday, so I thought I would do something a little special.

Yes, I am still doing the "using what I have on hand" thing, but one of the perks of having a deep freeze and buying a quarter beef every year is that you always have a nice cut to work with.  So today I am going to share with you how to get a PERFECT, pan seared, Rib Eye Steak with a gorgeous Gorgonzola Cheese Sauce.  This meal is a show stopper and you and your loved one are sure to enjoy it so...

Let's Get Started!

Ribeyes with Gorgonzola Cheese Sauce:
*Prep Time:  30 min.  *Cook Time: 20 min.  *Difficulty:  Easy  *Servings: 4-6

Ingredients:


  •  4 -6 Rib Eye Steaks
  • 1 c. Milk, Half & Half, or Heavy Cream
  • 1/2 c. Gorgonzola Cheese, crumbled
  • Steak Seasoning
  • 2 tbsp. Extra Virgin Olive Oil
  • 1 tbsp. Butter
  • Fresh Thyme
  • Fresh Rosemary
To get things started you will need to get your steaks out of the fridge about 30 min before you want to start cooking them.  



I like to make my cheese sauce first because as you are cooking your steaks the sauce has time to thicken and all the flavors come together.

So you will need to place a skillet over medium/high heat.


Next add the milk, cream, or half and half.  I have made with with all of the above so I know it will work.

You are going to allow the milk to heat up until it is just about to boil.


While you are waiting you will want to mince your herbs.  I like to save half of the rosemary sprig to add to the skillet with the steaks.


Once the milk starts to boil...


Add the cheese and


Herbs.


Season with a little salt and


Pepper.

Stir until the cheese has melted and smooth.  Let set and thicken while you make the steaks.


Now it is time to get the Ribeyes rolling!

To begin preheat the oven to 400 and place an oven proof skillet over high heat.


To the skillet add the oil and


Butter.
Allow the butter to melt and the skillet to get smoking hot.


While the skillet is getting hot you can pat the steaks dry,


And season them with salt, pepper, and my steak seasoning blend.

Steak Seasoning Blend:

  • 1 tbsp. Seasoning Salt
  • 1 tsp. Garlic Powder
  • 1 tsp. Onion Powder
  • 1/2 tsp. Salt
  • 1/2 tsp. Pepper



Once you have seasoned the steaks on all sides, you will want to rub the seasoning into the beef.
This creates a cry brine of sorts.


Now place the steaks into the HOT skillet and let them cook for 2 min.
I like to add some rosemary and garlic cloves for added flavor.


After 2 minutes flip and cook two more minutes.


Next place into a 400 degree oven for 4 minutes.
This will create the perfect medium middle.

Once it is finished cooking remove from the oven and let rest for 10 minutes.

Serve on the place with your favorite vegetable and pour the cheese sauce over it!  O.M.G!  You will not believe how delectably delicious this is!  It is a real treat that will come out perfect every time!
And can we just talk about that sauce.  It is like velvet on your plate.  Mmmmmmm.....

Ingredients:
  •  4 -6 Rib Eye Steaks
  • 1 c. Milk, Half & Half, or Heavy Cream
  • 1/2 c. Gorgonzola Cheese, crumbled
  • Steak Seasoning

  • 1 tbsp. Butter

Directions:  

Preheat the oven to 400 degrees.

Sauce:
  1. Take the steaks out of the refrigerator 30 minutes before you want to cook them. 
  2. Place a small skillet over medium/high heat and add the milk, cream, or half & half.  Let heat until the point it is just about to boil.  It will begin to bubble around the edge of the pan. 
  3. Add the cheese, herbs, salt, and pepper.  
  4. Whisk until cheese has started to melt and the sauce become smooth and creamy.  
  5. Remove from heat and set to the side.  
Steaks:
  1. Pat the steaks dry.
  2. Season, on all sides, with salt, pepper, and steak seasoning.*
  3. Rub the seasoning into the meat. 
  4. Place an oven-proof skillet over high heat.  Add the oil and butter and allow the skillet to get SMOKING HOT.
  5. Place the steaks into the hot skillet and cook for 2 min.  
  6. Flip and cook two more minutes. 
  7. Place in the oven for 4 minutes. 
  8. Remove from oven and let rest for 10 minutes. 
  9. Serve with your favorite side and drizzle the cheese sauce over the steak.
  10. ENJOY!
*Steak Seasoning Blend:

  • 1 tbsp. Seasoning Salt
  • 1 tsp. Garlic Powder
  • 1 tsp. Onion Powder
  • 1/2 tsp. Salt
  • 1/2 tsp. Pepper
