Roasted Broccoli and Potatoes

I have a new food addiction.

I know I may be late to the game with this one, but the other evening I was talking to my friend Catherine about new ways to make broccoli, and she said to me "Have you ever tried roasting it?"  I was like "No, why would I do that?"  She replied "Because it's DELICIOUS, DUH!"  I have to admit that I was a little skeptical, but in the spirit of adventure, I gave it a try.  OH MY STARS!!!  Delicious didn't even sum it up and the best part, IT WAS SO EASY!  I can't wait to share with you how I did it so...

Let's Get Started!

Roasted Broccoli and Potatoes:
*Prep Time: 10 min.  *Cook Time: 30-40 min.  *Difficulty:  Easy  *Servings:  6-8

Ingredients:


  •  7-8 Yukon Gold Potatoes
  • 1 Large Bunch of Fresh Broccoli
  • 1 Red Onion, quartered
  • 4-6 cloves of Garlic, sliced
  • 2-3 tbsp. Extra Virgin Olive Oil
  • 1 tbsp. Seasoning Salt
  • 1 tsp. Kosher Salt
  • 1 tsp. Thyme
  • 1/2 tsp.  Black Pepper
To begin, preheat the oven to 400 degrees and place a foil-lined baking sheet in the oven to heat as well. 



Next, trim the broccoli florets from the stalk and place into a large mixing bowl.


To prep the onion, you will cut it in half, through the root end.
Next peel the outer layer off.
Thirdly, trim to root end off, but do not remove entirely.  This will help the onion quarters to maintain their shape while in the oven.


Cut the onion into quarters with a rooted part to each section.


Add the onion and the garlic to the mixing bowl.


Next wash and dice the potatoes and add to the mixing bowl.

I like to use Yukon golds here because you don't have to peel them.
Anything to make it easier, right?


Now to the bowl add the seasoning salt,


Thyme,


Salt,


And pepper.


Add the olive oil to the bowl.


And reach in there to give everything a nice toss until it is coated with the seasoning and oil.


Now you can remove the foil-lined baking sheet from the oven and pour the seasoned and oiled vegetables onto the sheet.

You will hear a nice sear, which is EXACTLY what you want.  The hot baking sheet will help the potatoes and onions brown and caramelize.

Place in the preheated oven for 30-40 minutes, until the potatoes are tender.
I like to give everything a nice toss about half way through as well.

And the flavor, OH.THE.FLAVOR.  During the roasting time the broccoli becomes tender and sweet, so delicious.  This side is PERFECT for a Sunday supper or a quick weeknight meal, and I guarantee there is something in this dish that EVERYONE in your family will enjoy!  One thing I did was to grate a little fresh Parmesan over it for the cheese lovers in my life.  It took it to a whole other level.

So if you are suffering from the broccoli-as-a-side-dish blues, get in the kitchen and give these Roasted Broccoli and Potatoes a try TONIGHT!  You will be so glad you did!

PRINTABLE RECIPE

Ingredients:

Direction:
  1. Preheat the oven to 400.  
  2. Line a baking sheet with foil and place in the oven to preheat as well. 
  3. Trim the broccoli florets from the stalks and place in a large mixing bowl. 
  4. Peel and quarter your onion, making sure to leave the trimmed root end connected, and place in the bowl as well. 
  5. Add the sliced garlic to the mixing bowl. 
  6. Rinse and dice the potatoes.  Add them to the bowl 
  7. Add the seasoning salt, salt, pepper, and thyme to the bowl.
  8. Pour the oil into the bowl and toss everything until it is well coated with seasoning and oil. 
  9. Pour out into the preheated baking sheet and return to the oven.  
  10. Bake for 15 min.
  11. Remove the baking sheet from the oven and toss.  
  12. Return to the oven and cook for another 15 to 20 minutes until the potatoes are tender.  
  13. Serve and enjoy!*
*Sprinkle a little fresh grated Parmesan cheese over everything for the cheese lover in your life.
