Easy Air Fryer Chicken Fajita Bowls

Hey y'all! Welcome to my West Virginia Kitchen!

Life has been really hectic around here lately.

We've been working on some projects around the house, homeschool is in full swing, and well...you get the point. Life is LIFE-ING!

Truth be told, I haven't been putting as much thought into dinner as I usually would. You know those seasons when 5:00 rolls around and you're standing in the kitchen thinking, Wait...these people expect to eat AGAIN?!? That's pretty much where I've been.

And THAT, my friends, is when Fridge Foraging always comes in clutch!

If you've been around here for a while, you know I am a firm believer that some of the best meals happen when you stop worrying about a recipe, open up the fridge, freezer, and pantry, and see what you've already got.

And on this particular evening, y'all...I scored BIG!



I opened my freezer and found a bag of Member's Mark Homestyle Grilled Chicken Nuggets along with a frozen pepper and onion blend.

Okay. We're already cooking!

Next, I headed to the fridge. There I found some shredded cheese and ONE lonely packet of Chick-fil-A Avocado Lime Ranch Dressing.

Now we're really getting somewhere.

I knew I ALWAYS had rice in the pantry, and suddenly it hit me...

FAJITA BOWLS!

So naturally, I headed over to what I lovingly refer to as my Cabinet of Compliments—because if you ain't seasoning your food, you ain't getting compliments!—and there it was: Kinder's Fajita Seasoning.

PERFECT!

And because it was August and approximately seven thousand degrees outside, I did what any respectable home cook would do.

I pulled out the rice cooker and air fryer.

We were NOT turning on that stove!

Twenty minutes later, dinner was DONE.

Y'all, when I tell you these Easy Air Fryer Chicken Fajita Bowls were one of our favorite meals I've thrown together in a while, I mean it.

We've made them THREE TIMES since!

And that little packet of Avocado Lime Ranch?

Yeah...I went out and bought the whole dang bottle. 😂

This is exactly why I love Fridge Foraging. Dinner doesn't always have to be complicated, completely homemade, or planned three days in advance. Sometimes a few convenience ingredients, a well-stocked pantry, and a little creativity can turn into something your family genuinely loves.

What Is Fridge Foraging?

Fridge Foraging is simply looking through your refrigerator, freezer, and pantry and figuring out how to turn what you already have into dinner.

It isn't about following a recipe perfectly or having every ingredient on a shopping list. It's about being resourceful, using what needs to be used, and getting a good meal on the table without making dinner harder than it needs to be.

Sometimes you end up with a perfectly respectable dinner.

And sometimes you accidentally create something so good that you make it three more times. 😂






Why This Recipe Works

There is A LOT to love about these Easy Air Fryer Chicken Fajita Bowls.

It's fast. The chicken and vegetables cook in about 20 minutes in the air fryer.

It uses freezer and pantry staples. Frozen grilled chicken and frozen peppers mean there's almost no prep work involved.

There's minimal cleanup. The chicken and vegetables cook together in the same air-fryer basket, and I make the rice in my rice cooker. Easy dinner AND easy cleanup? Yes, please!

The flavors are BIG. Fajita seasoning brings plenty of smoky, savory flavor while the Avocado Lime Ranch adds creaminess and tang.

It's customizable. Change the rice, protein, vegetables, cheese, sauce, or toppings based on what you already have.

And most importantly...

It tastes GOOD!

Convenience food doesn't have to mean boring food.








Ingredients for Easy Air Fryer Chicken Fajita Bowls

For these Easy Air Fryer Chicken Fajita Bowls you will need:

  • 16 frozen Member's Mark Homestyle Grilled Chicken Nuggets
  • 10 ounces frozen pepper and onion blend, about half of a 20-ounce bag
  • 2 teaspoons Kinder's Fajita Seasoning OR 1 tablespoon Great Value Fajita Seasoning
  • 1-2 teaspoons neutral oil
  • 2 cups cooked rice
  • Chick-fil-A Avocado Lime Ranch Dressing, to taste
  • Shredded cheese, optional
  • 1 lime, cut into wedges
  • Fresh cilantro, chopped, for garnish

How to Make Easy Air Fryer Chicken Fajita Bowls

Step 1: Get Your Rice Going

Cook 2 cups of rice according to the package directions.

I use my rice cooker because we're keeping this dinner as hands-off as humanly possible.

Step 2: Air Fry the Chicken

Add 16 frozen grilled chicken nuggets to your air-fryer basket.

Cook at 400°F for 10 minutes.

Step 3: Add the Vegetables

After the chicken has cooked for 10 minutes, add the frozen peppers and onions directly to the air-fryer basket.

Drizzle the vegetables with 1-2 teaspoons of neutral oil and sprinkle everything with the fajita seasoning.

Give it all a good stir so that chicken, peppers, onions, oil, and seasoning get acquainted.

Step 4: Finish Cooking

Return the basket to the air fryer and cook at 400°F for another 10 minutes.

Give everything a stir about halfway through if your air fryer tends to cook unevenly.

The vegetables should be tender with a little color around the edges, and the chicken should be hot throughout.

Step 5: Build Your Bowls

Divide the cooked rice between two bowls.

Top each bowl with the fajita-seasoned chicken, peppers, and onions.

Add shredded cheese if desired, then drizzle generously with Avocado Lime Ranch Dressing.

Give each bowl a spritz of fresh lime juice and finish with chopped cilantro.

And THAT'S IT!

Dinner is served.






Tips and Tricks

Don't thaw anything first. The whole beauty of this recipe is that the chicken and pepper blend go straight from freezer to air fryer.

Give your air fryer some breathing room. Air fryers cook by circulating hot air, so you don't want everything packed into a solid brick. If you have a particularly small air fryer, you may need to cook in batches.

Seasoning blends vary. I use 2 teaspoons of Kinder's Fajita Seasoning. I've also made this with 1 tablespoon of Great Value Fajita Seasoning and it worked beautifully. Start conservatively if you're using another brand because the salt and seasoning levels can vary.

Use the oil lightly. You aren't trying to coat everything in oil. A small drizzle helps the seasoning stick to the frozen vegetables and encourages a little browning.

Make it YOUR Fridge Forage. Don't have fajita seasoning? Taco seasoning will work. Have leftover corn in the refrigerator? Throw it on there. Half a can of black beans needs used? Hello, dinner!

Don't skip the lime. That little hit of acidity at the end wakes everything up and balances the creamy dressing.






Substitutions and Variations

This is where you get to raid YOUR kitchen.

Instead of white rice, try brown rice, cilantro-lime rice, cauliflower rice, or even leftover Mexican-style rice.

No grilled chicken nuggets? Use leftover cooked chicken, rotisserie chicken, steak, tofu, or another fully cooked chicken product you enjoy.

You can add black beans, corn, tomatoes, avocado, salsa, jalapeños, lettuce, green onions, sour cream, guacamole, or whatever else is hanging around.

And while I LOVE the Avocado Lime Ranch on these—and apparently love it enough to purchase an entire bottle after trying one packet—you could substitute regular ranch, cilantro-lime dressing, chipotle ranch, salsa, taco sauce, or another creamy Southwestern-style dressing.

That's the beauty of a Fridge Forage meal.

Stovetop Chicken Fajita Bowls

No air fryer? No problem!

Heat about 1-2 teaspoons of neutral oil in a large skillet over medium-high heat.

Add the frozen grilled chicken nuggets and cook for approximately 5-7 minutes, stirring occasionally.

Add the frozen pepper and onion blend and fajita seasoning.

Continue cooking for another 8-10 minutes, stirring occasionally, until the vegetables are tender and the chicken is heated completely through.

If the frozen vegetables release a lot of liquid, simply continue cooking uncovered for another couple of minutes to allow the excess moisture to evaporate.

Serve over cooked rice and finish with Avocado Lime Ranch, lime juice, cilantro, and any other toppings you like.






Frequently Asked Questions

Can I make these Chicken Fajita Bowls with fresh chicken?

Absolutely!

Instead of the frozen grilled chicken nuggets, cut approximately 8-10 ounces of boneless, skinless chicken breast or chicken thighs into bite-sized pieces.

Toss the raw chicken with a small amount of neutral oil and about half of your fajita seasoning.

Air fry at 400°F for approximately 7-8 minutes before adding your vegetables.

Once the vegetables are added, continue cooking everything for another 8-10 minutes, stirring halfway through.

Because you're working with raw poultry, always check that the thickest pieces of chicken have reached an internal temperature of 165°F before serving.

Depending on the size of your chicken pieces and your particular air fryer, your total cooking time will usually be around 15-18 minutes.

Can I use fresh peppers and onions?

You sure can!

Slice approximately 2 bell peppers and half of a medium onion.

Fresh vegetables don't need quite as much cooking time as frozen ones.

If you're using the original frozen cooked chicken nuggets, air fry the chicken at 400°F for 10 minutes as directed. Then add the fresh peppers and onions, oil, and fajita seasoning and cook for another 7-8 minutes, rather than the full 10 minutes used for frozen vegetables.

If you like your peppers softer, simply give them another couple of minutes.

Can I use both fresh chicken and fresh peppers?

Yes!

Cut 8-10 ounces of boneless, skinless chicken breast or thighs into bite-sized pieces. Toss with a little oil and fajita seasoning and air fry at 400°F for about 7 minutes.

Add your sliced fresh peppers and onions, stir everything together, and continue cooking for approximately 7-9 minutes, stirring halfway through.

Make sure the chicken reaches an internal temperature of 165°F before serving.

The exact cooking time will depend on the size of the chicken pieces and your air fryer.

What kind of rice works best?

Whatever you've got!

I generally use regular white rice because it's something I always keep in my pantry, but jasmine, basmati, brown rice, Mexican rice, or cilantro-lime rice would all be delicious.

And if you've got leftover rice in the refrigerator?

Even better.

Are Member's Mark Grilled Chicken Nuggets required?

Not at all.

They're what inspired this recipe and what I personally use, but another brand of fully cooked frozen grilled chicken will work.

Because different products vary in size and thickness, follow the package directions when necessary and make sure the chicken is heated completely through.

What can I use instead of Avocado Lime Ranch?

Any creamy Southwestern-style dressing would be great.

Try chipotle ranch, cilantro-lime ranch, regular ranch, a Southwest dressing, or even sour cream mixed with a little salsa and lime juice.

But I will say this...

That Avocado Lime Ranch is pretty dang good.

There's a reason a whole bottle now lives in my refrigerator. 😂

Can I meal prep these Chicken Fajita Bowls?

Absolutely.

Cook the rice, chicken, peppers, and onions and divide them into airtight containers. Refrigerate for up to 3-4 days.

Keep your dressing, cilantro, and lime separate and add those after reheating.

And you know what?

Sometimes those end up being the BEST meals.

That's what I want Fridge Foraging to be about. It's not just using up leftovers. It's looking at the random ingredients you already have and asking yourself:

"Okay...what can I turn this into?"

You don't need a perfectly planned menu, a refrigerator full of specialty ingredients, or two hours to make a delicious dinner for your family.

Sometimes all you need is some frozen chicken, a bag of peppers, rice, a packet of dressing, and your trusty Cabinet of Compliments.

And if your family asks you to make your random freezer creation three more times?

I'd say you foraged pretty dang well!
