15 Minute One Pot Chicken Dinner Recipe

No matter who you are, where you live, or what you do, we all have one thing in common.  We are busy.  And after a long hard day the LAST thing you want to be doing is standing in your kitchen, slaving away over a hot stove. This is why I LOVE easy meals like this 15 Minute One Pot Chicken Dinner.

No, you're not seeing things! I said FIFTEEN MINUTES and ONE POT!  Oh, and did I mention it only has FIVE main ingredients (I don't count spices in that)!?!  Not to mention IT'S DELICIOUS to boot!  I know y'all are going to be making this one on a weekly basis, so...

Let's Get Started!

For this 15 Minute One Pot Chicken Dinner you are going to need 5 simple ingredients and a few common spices:

  • 1 lb of Boneless, Skinless Chicken, thinly sliced (dark or white meat is fine)
  • 2 c Instant Rice
  • 2 c Chicken Broth
  • 1 15 oz Can of Cream of Chicken Soup
  • 1 12 oz bag of Frozen Broccoli Florets
  • 2 Tbsp oil
  • 1 tsp Koser Salt
  • 1/2 tsp Ground Black Pepper
  • 1/4 tsp Garlic Powder
  • 1/4 tsp Onion Powder
  • 1/4 tsp Paprika
  • 1/4 tsp Italian Seasoning


A grey, deep, skillet over a medium/high flame.

To begin, you're going to want to get yourself a nice, deep skillet and place over a medium/high heat.
Add the oil to the pan and allow it to get good and hot.
It's important that the pan is deep so that you can fit the entire meal in one pan.

Next, you're going to combine the spices together in a small bowl.
I like blending all my spices together like this because I feel like it helps everything get seasoned evenly.

Boneless, skinless, chicken breasts on a red cutting board, liberally seasoned.

Once that is finished you're going to season the chicken LIBERALLY on both sides.
Don't skimp here.
This is where you go from a good dish to a GREAT dish!

**TAKE NOTE**
Notice that I am using thinly sliced breasts here.  If your store doesn't have those just cut a regular size breast in half through the middle.  You won't need to worry about this if you are using dark meat.

Now place the chicken into the hot pan and cook for 4-5 minutes per side until the chicken is browned and no longer pink.

**PRO TIP**
You will know its time to turn your chicken when you see the white in the chicken coming half way up as seen in the image above.

Once the chicken is browned and fully cooked you can remove it from the pan and sit it to the side for later.

While the Chicken is cooking you can take this time to combine the broth and cream of chicken soup in a bowl.

Season it with a little salt and pepper and whisk it together until smooth.

This is what is going to make a great sauce for your 15 Minute One Pot Chicken Dinner.

Pour the soup and broth mixture into the pan and bring it to a boil.
Be sure to take your spoon or spatula and scrape up any of those brown bits off the bottom of the pan.  That is where a HUGE amount of flavor is waiting to be added to your dish!

Time to add the broccoli and minute rice to the pan.

You'll notice that I am emphasizing the fact that I used instant rice.
YOU MUST USE INSTANT RICE FOR THIS DISH TO TURN OUT IN 15 MINUTES.
Yes, you can use regular rice in this recipe, BUT you will need to add approximately 2 more cups of water and it will take around 30 minutes.

Give everything a nice stir and make sure that it is mixed into the sauce.
I also like make sure that my broccoli florets are evenly dispersed throughout the entire pan.

Place the fully cooked chicken on top of the broccoli and rice mixture.

The pan, on the stove, with a lid on it.

Now cover the pan, drop the heat to a medium/low, and cook for 5 more minutes.

This is where all the magic happens!

And VOILA!  Just like that you have made an AMAZING 15 Minute One Pot Chicken Dinner!

I love this meal because one, it's so darn quick and easy, but two it's super versatile!  I used broccoli, but you can use any frozen vegetable you like.  Also, you can make this with chicken, shrimp, smoked sausage, the possibilities are endless.  The one thing I do know to be certain everyone in the house is gonna love it, so get in the kitchen and give this 15 Minute One Pot Chicken Dinner a try TONIGHT!

15 Minute One Pot Chicken Dinner

We are all bust, but with one pot, 5 main ingredients, and 15 minutes you can have dinner on the table with this 15 Minute One Pot Chicken Dinner. It's sure to be a family favorite in no time!

ingredients:


  • 1 lb Boneless Skinless Chicken *
  • 2 c  Instant Rice **
  • 1 12 oz bag of Frozen Broccoli Florets
  • 1 10 oz can of Cream of Chicken Soup
  • 2 c Chicken Broth
  • 2 Tbsp Oil
  • 1 tsp Kosher Salt
  • 1/2 tsp Ground Black Pepper
  • 1/4 tsp Garlic Powder
  • 1/4 tsp Onion Powder
  • 1/4 tsp Italian Seasoning
  • 1/4 tsp Paprika

instructions


  1. Place deep skillet over medium/high heat and add the oil.  Allow the pan to get hot. 
  2. Combine the salt, pepper, garlic powder, onion powder, Italian seasoning, and paprika in a dish and LIBERALLY season the chicken on both side. 
  3. Add the chicken to the pan and cook 4-5 minutes on each side until brown and no longer pink.***
  4. In a small mixing bowl whisk together the broth and cream of chicken soup. 
  5. Remove the fully cooked chicken from the pan.  
  6. Pour the broth mixture into the hot pan and add the instant rice and broccoli.  Mix everything together. 
  7. Place the fully cooked chicken on top of the broccoli and rice mixture, cover, lower the heat to medium/low, and cook for 5 minutes.
  8. Serve and Enjoy!

NOTES:

*  You can use dark or white meat, but if you use white meat make sure it is thin sliced or cut the chicken breasts in half. 
 **  You MUST use instant rice for this to work in 15 minutes. 
***  You will know it's time to turn the chicken when the the chicken has turn white half way up the side of the piece.
